WEIGHT WATCHERS BLT PASTA SALAD

This is a weight watcher recipe, and one of my favorites. My whole family loves this. It is only 3pts for 1 cup! I didn't see it posted anywhere, and thought I would share it. It is so simple and good. Servings are a guestimate, as my family doesn't have to stick to one cup.

Weight Watchers BLT Pasta Salad image

Steps:

  • In a large bowl mix together shell, bacon, tomatoes, and lettuce.
  • In a small bowl mix the sugar, vinegar, mayo, sour cream and mustard, salt and pepper to taste.
  • Pour over shell mixture, stir and chill.

3 2/3 cups cooked large macaroni shells
4 cups tomatoes, cut up
4 slices bacon, cooked and crumbled
3 cups of thin sliced lettuce
1 teaspoon sugar
2 teaspoons cider vinegar
1/2 cup fat-free mayonnaise
1/3 cup light sour cream
1 tablespoon Dijon mustard
salt and pepper

BLT PASTA SALAD

Serve over a (The 'L') lettuce leaf with a couple extra wedges of fresh tomatoes or melon slices. What a great excuse for a girl's luncheon! Crackers, lemonade, ice tea, sorbet..... it's time.

BLT Pasta Salad image

Steps:

  • Cook pasta according to package directions, drain, rinse and cool.
  • Toss the stir-ins with the cooled pasta.
  • Mix dressing ingredients together in a small dish. Stir well.
  • Pour dressing over pasta mixture, toss to coat well, cover and chill at least two hours, best if longer.
  • Just before serving, stir in your crumbled bacon. Toss to coat.
  • Serve with the 'B' and 'T' with the 'L' and maybe some extra 'T' wedges.

2 cups uncooked elbow macaroni (use your favorite shaped pasta)
1 1/4 cups mayonnaise (I prefer Miracle Whip)
5 teaspoons white vinegar
1/4 teaspoon salt
1/8 teaspoon pepper
1 lb bacon, cooked crisp, drained, and crumbled
1 head bibb lettuce (or whatever you like)
5 green onions, thinly sliced
1 -2 tomatoes, diced and seeded
1 1/4 cups celery, diced
