CRANBERRY, ORANGE AND WHITE CHOCOLATE CHUNK COOKIES

Tart cranberries, creamy white chocolate and sweet oranges come together in these deliciously addictive cookies.

Cranberry, Orange and White Chocolate Chunk Cookies image

Steps:

  • Heat oven to 350°F. Spray cookie sheets with nonstick cooking spray or line with parchment paper. In a large bowl, beat butter, sugar, brown sugar and orange zest on medium speed of the electric mixer until well blended. (The mixture will have the consistency of wet sand.) Add the egg and vanilla and beat until smooth.
  • In a small bowl, stir together the flour, baking powder, baking soda and salt. Add to the sugar mixture and stir by hand until almost combined; add the cranberries and white chocolate and stir just until blended.
  • Drop spoonfuls of dough about 1 inch apart on a cookie sheets. Bake 12 to 14 minutes, until light golden and set around the edges but still soft in the middle. Let set on cookie sheet 1 to 2 minutes. Transfer to a wire rack to cool.

White Chocolate and Cranberry Cookies image

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  • In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in the egg and brandy. Combine the flour and baking soda; stir into the sugar mixture. Mix in the white chocolate chips and cranberries. Drop by heaping spoonfuls onto prepared cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven. For best results, take them out while they are still doughy. Allow cookies to cool for 1 minute on the cookie sheets before transferring to wire racks to cool completely.

White Chocolate Cranberry Orange Cookies image

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. In the bowl of a stand mixer fitted with a paddle attachment, cream together butter and sugars until fluffy and well blended. Add egg, vanilla, orange extract and orange zest.
  • 3. Add flour, cornstarch, baking soda and salt then stir in white chocolate chips and craisins.
  • 4. Using a spoon roll dough into one in balls and drop dough onto a parchment papered baking sheet. Bake for 8-10 minutes, until barely golden brown around the edges. Note: the tops will not be brown and look slightly undercooked, I bake for exactly 10 minutes which seems perfect.
  • 5. Let cool, on the sheet, on a wire rack for five minutes. Remove from baking sheet and let cool completely.
  • 6. For glaze mix powdered sugar with orange juice a little at a time until the consisentcy is easy to drizzle onto the cookies. Makes approximately 3 dozen delicious cookies!

The first time I tried these, a co-worker on a specialized team brought them in for breakfast. She got them from Starbucks® (a seasonal delight, I'm told). So, I checked them out after I got off from work and at over $2 per little "triangle" piece, I decided I'd learn to make them for a lot less. My family members all urged me to recreate these. So after a bit of research, I found that there's a few copycat recipes online; but this is my twist on that concept.

Cranberry-Orange Cookie Bars image

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a 9x13-inch baking dish with parchment paper.
  • Beat butter, brown sugar, and white sugar for bars together with an electric mixer until light and fluffy, about 5 minutes. Stir in eggs, orange extract, and vanilla extract until well blended. Add flour, baking powder, and ginger; mix until well incorporated and the batter looks like soft cookie dough. Stir in cranberries and white chocolate chips until well mixed. Spread the stiff batter into the prepared pan.
  • Bake in the preheated oven until light brown and a toothpick inserted into the center comes out clean, 30 to 35 minutes. Don't overbake, or your bars will be dry. Let cool completely, about 30 minutes.
  • Meanwhile, mix cream cheese and butter for frosting together until light and fluffy. Add confectioners' sugar and orange extract; beat mixture until fluffy and spreadable. Spread evenly over the cooled bars.
  • Combine cranberries and orange zest for topping in a food processor and roughly chop. Sprinkle evenly over the frosted bars.
  • Mix white chocolate chips and oil together in a glass, microwave-safe measuring cup. Microwave until fluid enough to drizzle, 1 minute to 1 minute 15 seconds, stirring every 15 seconds until melted. Use a fork or whisk to drizzle the melted chocolate diagonally across the bars.
  • Allow chocolate to set for at least 1 hour before cutting into squares or triangles.
