WHITE GELATIN
This recipe is called white gelatin but is very moist unlike regular gelatin. My family has made this every year for Thanksgiving and Christmas and it never gets old.

- In a medium bowl, beat cream cheese and sugar until smooth and well blended. In a separate bowl, dissolve the gelatin in boiling water. Stir into the cream cheese mixture along with the milk, lemon juice and vanilla. Fold in the whipped topping. Pour into a mold if desired, and refrigerate until set, about 3 hours.

- Boil milk and add sugar to dissolve completely.
- Dissolve the gelatin in the cold water.
- Add together the milk mixture and the gelatin mixture.
- Stir in the vanilla.
- Beat in the sour cream.
- Pour into serving bowl and refrigerate till firm.
RED, WHITE AND BLUE JELLO SHOTS
Happy 4th of July! This will make enough shots for your party or barbeque. (About two cookie sheets full.) You can always experiment from here depending on if you have any other liquors in the house. Cook time is chill time. EDIT: I've edited this to improve the coconut shots. Also, Jello has started to make "Limited Edition" Pina Colada flavored jello which is perfect for the white ones. It comes out in a cream color and you'll only need to add water and liquor.

- We'll start with the blue. Boil a teakettle full of water, and when it is boiling, pour two cups of the water into a clear pitcher or heatproof bowl. Add the blue gelatin powder. Stir until dissolved. Add 1.5 cups cold water (or equivalent amount of ice if you want it to solidify faster). Add 1/2 cup vodka (or more, to taste). Pour into individual dixie cups. Drop one blueberry into each cup, it will float on top.
- Next, the red. Do the same as you did in step one, but add 1/2 cup light rum to taste instead of vodka. Pour into dixie cups and drop a slice of strawberry or a raspberry into each cup.
- Next, the white. Start heating fruit juices to a simmer in a saucepan. Pour the room temperature rum into a large bowl, and sprinkle gelatin over the rum, avoiding clumps. Let it sit a minute, then add hot fruit juice while stirring with a fork (a beater makes it too fuffy). Add sugar and stir until dissolved. Pour into individual dixie cups.
- Set dixie cups of all colors on cookie sheets to cool in the fridge. You can stack full cookie sheets on top of one another. Chill until set.

From THE SALAD BOOK by Michele Evans, this recipe would be spectacular if used as part of brunch, salad course or dessert. It will make a 3 1/2 cup mold as written, but can be halved or divided into smaller mold forms. (Time does not include refrigeration time)

Steps:
- Put 1/2 cup water into a sml saucepan, add gelatin & allow to soak for a few minutes.
- Place saucepan over a low heat & stir till the gelatin dissolves. Stir in the lemon juice & sugar.
- Continue stirring till the sugar dissolves & remove the pan from the heat.
- Add the remaining 1/2 cup of water & the wine. Refrigerate till the mixture develops a syrup consistency.
- Add fruits, mix gently & spoon the jelly into a 1 qt mold or smaller molds of choice.
- Refrigerate & chill thoroughly till well-set. Unmold & serve.
- SERVING SUGGESTIONS: For brunch, serve w/scones, bagels or English muffins. As a salad course, serve atop greens & use a poppy seed or other complimentary dressing. As a dessert, serve w/cheese & crackers -- or -- baguette slices topped w/cheese of choice & the jelly as a dessert bruschetta. A sml dish of choc mints would make a nice combo w/either choice.
- NOTE: IMO, the fruits used are suggestions & others can be subbed. I will prob use a combo of green & red grapes in place of the cherries. Kiwi segments could also be used.

In a large multi-cup measuring cup (I use my 4 cup Pyrex), add all of the reserved pineapple juice and then add enough water to the juice to make a total of 2 cups.
