SIMPLE WHITE CAKE
This cake was sent home from our children's school. It is the simplest, great tasting cake I've ever made. Great to make with the kids, especially for cupcakes.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x9 inch pan or line a muffin pan with paper liners.
- In a medium bowl, cream together the sugar and butter. Beat in the eggs, one at a time, then stir in the vanilla. Combine flour and baking powder, add to the creamed mixture and mix well. Finally stir in the milk until batter is smooth. Pour or spoon batter into the prepared pan.
- Bake for 30 to 40 minutes in the preheated oven. For cupcakes, bake 20 to 25 minutes. Cake is done when it springs back to the touch.

MOUNTAIN DEW™ CAKE
This cake is made simply with cake mix, pudding mix, eggs, oil, and good ol' Mountain Dew® and features a pineapple topping.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
- In a large bowl, combine cake mix, pudding mix, oil, eggs and citrus soda. Mix until all ingredients are moistened.
- Pour into prepared 9x13 inch pan and bake at 350 degrees F (175 degrees C) for 30 to 35 minutes. Cool completely.
- To make the topping: In a saucepan, combine pineapple (with juice), sugar and corn starch. Bring to a boil and cook, stirring constantly, until thick. Remove from heat. Add butter and coconut. Spread topping evenly over cake.

WHITE MOUNTAIN CAKE
To add the element of orange to it, use orange extract instead of almond.

Steps:
- 1. Sift and measure flour. Add salt and baking powder, and sift again.
- 2. In a large bowl, cream shortening. Add 1 cup of the sugar gradually, and cream until fluffy. Add sifted ingredients alternately with milk and flavoring. Beat thoroughly after each addition.
- 3. Beat egg whites until stiff. Gradually add in the remaining 3/4 cup sugar to egg whites and fold into mixture. Pour batter into greased 9 inch round pans. Using parchment paper to line the bottom will yield a better result when removing from pan. Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes.
- 4. Cool, and frost with Creamy Frosting. To make Prosperity Cake, add orange extract instead of almond.

Steps:
- Combine sugar, corn syrup, and water in small saucepan.
- Cover; heat to rolling boil over medium heat.
- Remove cover and boil rapidly, without stirring, to 242 F on candy thermometer.
- As mixture boils, beat egg whites until stiff peaks form.
- Pour hot syrup very slowly in a thin stream into the beaten egg whites, beating constantly on medium speed.
- Beat on high speed until stiff peaks form.
- Add vanilla during last minute of beating.
- VARIATIONS: Add 1/4 cup sifted cocoa for Cocoa Frosting, folding in till blended; for Lemon Frosting substitute 1 TBSP lemon juice for the vanilla and add 1/4 tsp.
- grated lemon peel and 10 drops of yellow food coloring; for Pink Mountain Frosting, sustitute maraschino cherry juice for the water; for Satiny Beige Frosting substitute brown sugar (packed) for the granulated sugar and decrease vanilla to 1/2 tsp.
