WICKED GOOD BOSTON CREAM PIE
This recipe is from "Cooks Illustrated" and, though time-consuming, sounds delicious. I am posting it for future use. Chill the assembled cake for at least 3 hours to make it easy to cut and serve. Note: Prep and Cooking times do not include chilling times.

- For the Pastry Cream:.
- 1. Heat half-and-half in medium saucepan over medium heat until just simmering. Meanwhile, whisk yolks, sugar, and salt in medium bowl until smooth. Add flour to yolk mixture and whisk until incorporated. Remove half-and-half from heat and, whisking constantly, slowly add ½ cup to yolk mixture to temper. Whisking constantly, return tempered yolk mixture to half-and-half in saucepan.
- 2. Return saucepan to medium heat and cook, whisking constantly, until mixture thickens slightly, about 1 minute. Reduce heat to medium-low and continue to simmer, whisking constantly, 8 minutes.
- 3. Increase heat to medium and cook, whisking vigorously, until bubbles burst on surface, 1 to 2 minutes. Remove saucepan from heat; whisk in butter and vanilla until butter is melted and incorporated. Strain pastry cream through fine-mesh strainer set over medium bowl. Press lightly greased parchment paper directly on surface and refrigerate until set, at least 2 hours and up to 24 hours.
- For the Cake:.
- 1. Adjust oven rack to middle position and heat oven to 325 degrees. Lightly grease two 9-inch round cake pans with nonstick cooking spray and line with parchment. Whisk flour, baking powder, and salt together in medium bowl. Heat milk and butter in small saucepan over low heat until butter is melted. Remove from heat, add vanilla, and cover to keep warm.
- 2. In stand mixer fitted with whisk attachment, whip eggs and sugar at high speed until light and airy, about 5 minutes. Remove mixer bowl from stand. Add hot milk mixture and whisk by hand until incorporated. Add dry ingredients and whisk until incorporated.
- 3. Working quickly, divide batter evenly between prepared pans. Bake until tops are light brown and toothpick inserted in center of cakes comes out clean, 20 to 22 minutes.
- 4. Transfer cakes to wire rack and cool -completely in pan, about 2 hours. Run small plastic knife around edge of pans, then invert cakes onto wire rack. Carefully remove parchment, then reinvert cakes.
- To Assemble:.
- 1. Place one cake round on large plate. Whisk pastry cream briefly, then spoon onto center of cake. Using offset spatula, spread evenly to cake edge. Place second layer on pastry cream, bottom side up, making sure layers line up properly. Press lightly on top of cake to level. Refrigerate cake while preparing glaze.
- For the Glaze:.
- 1. Bring cream and corn syrup to simmer in small saucepan over medium heat. Remove from heat and add chocolate. Whisk gently until smooth, 30 seconds. Let stand, whisking occasionally, until thickened slightly, about 5 minutes.
- 2. Pour glaze onto center of cake. Use offset spatula to spread glaze to edge of cake, letting excess drip decoratively down sides. Chill finished cake 3 hours before slicing. Cake may be made up to 24 hours before serving.

- Preheat oven to 350 degrees F (175 degrees C).
- Place sliced apples in a large bowl. In a small bowl combine white sugar, brown sugar, cinnamon, nutmeg, allspice and flour. Stir well and pour mixture over apples. Use half the butter and cut butter into small pieces and add to apples. Toss apples until thoroughly coated.
- Pour apples into pastry-lined pie pan. Dot apples with the rest of butter. Place second pastry on top. Seal edges.
- Melt butter. Add vanilla to butter. Mix and baste top pie crust (second pastry). Sprinkle cinnamon sugar over top pie crust.
- Cut steam vents in top crust.
- Bake in preheated oven for 45 to 55 minutes, until crust is golden brown.

WORLD'S BEST MAINE WHOOPIE PIES - AYUH
Whoopie Pies are one of those comfort foods that make you want more than one. They just don't get any better. Though Whoopie Pies can be delicious any old way...the preferred way to have them is about 5-10 minutes out of the freezer. Tall glass of milk and one of these Whoopies...you will not have a care in the world! The frosting is phenomenal, but make sure you remember that when making it, it will look like a real mess until you've beaten it on high for at least five minutes. Sometime after that it will become like nothing you've seen or eaten. This makes a big batch and is easily halved.

- Preheat oven to 375 degrees F (190 degrees C). Cut and set aside 25 pieces of plastic wrap about 5 inches square.
- For cookies, beat 1/2 cup of vegetable shortening, 2 cups of milk, 2 cups of sugar, the eggs, and 2 teaspoons of vanilla extract together in a large mixing bowl until smooth and creamy. In a separate bowl, whisk the 4 cups of flour with both amounts of unsweetened cocoa, baking soda, and salt until thoroughly combined. Beat the flour mixture into the wet ingredients just until smooth.
- Scoop up the batter by teaspoons, and drop onto ungreased baking sheets in small round dollops about 2 inches apart. Recipe should make about 50 cookies. The cookies will rise and expand a lot.
- Bake in the preheated oven until the cookies are set in the middle, 8 to 10 minutes. Allow to cool on baking sheets for several minutes before removing to finish cooling on racks.
- To make the filling, place 1 cup milk in a microwave-safe measuring cup, and cook in microwave until hot but not simmering, 1 to 2 minutes. Pour the heated milk into a large mixing bowl. Add the cup of room temperature butter, 1 cup of vegetable shortening, 2 cups of sugar, 2 tablespoons of flour, 2 teaspoons of vanilla extract, and the marshmallow creme. Beat the mixture on high speed until the frosting is fluffy, 5 to 10 minutes. At first the frosting will appear lumpy, but keep beating.
- To fill the cookies, choose 2 cookies that are about the same size, and spread about 1 1/2 tablespoon of the frosting onto the flat bottom of a cookie. Top with the other cookie, flat side down, and wrap the filled cookie in a sheet of plastic wrap. Place the filled cookie into the freezer. Repeat with remaining cookies and frosting, wrapping each whoopie pie in plastic wrap and freezing.
- To serve, remove whoopie pies from the freezer and allow to thaw until very cold but not frozen, 10 to 15 minutes.

- Shell: Mix together shortening, butter, sugar, eggs and vanilla.
- Sift together dry ingredients and set aside. Add milk, cocoa and hot water. Then add the dry ingredients.
- Scoop large rounded spoonfuls of batter onto a greased cookie sheet and space at least 2-inches apart.
- Bake at 350° for 10 minutes.
- Filling: Add all ingredients in a bowl and beat until smooth. Then place scoop of filling between two of the shells and enjoy!

- Directions: Mix all ingredients together in a large bowl with a mixer until completely mixed, about 2 minutes. On a cookie sheet, place large spoonfuls of mixture leaving about 2 inches between each spoonful. Bake at 350 degrees for 10 to 12 minutes. Once baked, place whoopie pie cakes on a rack to cool. Directions for filling: Mix all ingredients together in a large bowl, mixing until smooth. When cakes are cool, frost one cake with desired amount of filling and top with a second cake to make a sandwich.

- Preheat oven to 350°F.
- Butter two 9-inch deep dish pie plates.
- Saute beef, pork, onion and celery in oil.
- Add flour, stir, cook until mixture starts to bubble (2 to 3 min).
- Slowly add chicken stock.
- Stir in thyme, rosemary, cloves, salt and pepper.
- Cook and stir until thickened.
- Stir in peas and corn.
- Boil peeled potatoes until fork tender in salted water.
- Heat half and half (don't boil).
- Drain potatoes and place in large bowl of electric mixer.
- Beat on low, slowly add half-and-half, the cheeses, salt and pepper.
- Divide meat mixture between the two pie plates.
- Top each with half potato mixture.
- Scatter bits of butter on top.
- Place pies on baking sheets (mine always overflow).
- Bake 45 min (or until potato are browned).

My family called this "Wicked Pie" becasue is it wickedly rich. It's like a pecan pie and cheesecake COMBINED.

- CRUST:.
- Combine flour and salt. Cut shortening into flour mixture with pastry blender until blended to form pea-sized chunks. Sprinkle with water mixture a little at a time. Mix with fork until dough forms a ball. Roll out crust on heavily floured surface. Do not "overwork" the dough as this will cause a tough crust. It is more important that the crust is tender, even if it rips and looks a little messy. Turn into deep dish pie plate.
- Preheat oven to 375 degrees. Beat cream cheese, 1/3 cup sugar, 1 egg, vanilla extract and salt until well blended. Spread onto bottom of unbaked crust. Sprinkle pecans over cream cheese mixture. Combine topping ingredients at medium speed until just blended. Carefully pour over pecans. Bake 35 to 40 minutes or until center is firm to touch. Refrigerate after coooled.
