CREAMY CUCUMBER SALAD
Fresh dill and sour cream turn the summer staple into something cool, creamy and refreshing. Try this classic Midwestern salad with black bread and smoked salmon, or as a simple side for chicken or fish.

Steps:
- Put a large colander in a large bowl. Add the cucumbers and onions to the colander, sprinkle with 1 tablespoon salt and toss until the salt is evenly distributed. Let stand at room temperature for at least 1 hour and up to 2 hours.
- Transfer the cucumbers and onions from the colander to a paper towel-lined baking sheet and pat them dry with another layer of paper towels.
- Whisk together the sour cream, dill, vinegar and a few cracks of black pepper in a medium bowl. Add the cucumbers and onions and toss until coated.
- To make ahead: Salt and pat dry the cucumbers and onions as above, then keep separate from the dressing until ready to serve.

When we were kids, my sister and I would prepare the freshly picked lettuce for this wilted lettuce salad recipe, rinsing it several times and carefully drying it. - In a large skillet, cook bacon over medium heat until crisp. - Mix cucumbers, sweet onion, and sea salt together in a bowl. Cover bowl with plastic wrap and let sit for 30 minutes.
- Turn cucumber mixture into a colander set over a bowl or in a sink; let drain, stirring occasionally, until most of the liquid has drained, about 30 minutes more. Transfer drained cucumber mixture to a large bowl.
- Stir mayonnaise, vinegar, sugar, dill, garlic powder, and black pepper together in a bowl with a whisk until smooth; pour over the cucumber mixture and stir to coat vegetables with the dressing.
- Cover bowl with plastic wrap and refrigerate at least 2 hours.

Steps:
- Prepare cucumbers in a bowl and sprinkle with salt, mixing thoroughly.
- Cover and allow to sit on counter for 2-3 hours.
- Rinse cucumbers throughly with water and drain.
- Toss cucumbers with vinegar and gently drain.
- Fold in sour cream and top with pepper to taste.
- Stir in pepper before serving.
- To make with lettuce, break apart one head of iceberg lettuce and separate the leaves, salting as above and allowing to sit until wilted then follow remaining steps.

Cool, delicious cucumber salad. For a pretty salad, peel only half of each cucumber, leaving strips of skin on each. Don't make the vinegar solution first and then chop the cucumber because it's important that the vinegar solution be hot to ensure proper flavoring.

- 1. peel cucumber and cut into round slices. Peel and cut garlic in half and put under cucumber slices. Salt cucumbers and cover with water. Let stand 2 to 4 hours.
- 2. In a separate bowl add: 2 tblspns. of sugar, 4 tblspns. of vinegar, and 2 tblspns. of water. Mix until sugar is dissolved.
- 3. Remove cucumbers from salted water and strain. Put in a container and add the sugar, vinegar and water. Let marinate or eat it right away. Enjoy!
