WINTER CABBAGE SOUP
From SOS Cuisine. I made a double batch and froze part of it so didn't add the milk until I served it. I like it better without the milk and my dbf enjoys it with the milk!! :)

Steps:
- Prepare the vegetables: thinly slice the onions; finely chop the cabbage; shred the carrots.
- Heat the oil and butter in a saucepan over medium heat. Add the vegetables, sugar, salt, and pepper. Stir well, then cover and cook 25 min over very low heat.
- Pour in the broth, bring to a boil, then cover and simmer 15 minute Pour in the milk, then adjust the seasoning.
- Ladle the soup into bowls and serve.

WINTER VEGETABLE SOUP
Steps:
- In a medium saucepan, combine the broth with the potatoes, tomatoes, beans and onions, and season with salt and pepper. Bring to a boil, and then reduce the heat to medium. Cook the soup until the potatoes are tender, 20 to 25 minutes. Remove from the heat, stir in the corn and serve. Adjust seasoning as needed.

Steps:
- Heat the oil in a casserole pot over a low heat. Add the onion, celery and carrot, along with a generous pinch of salt, and fry gently for 15 mins, or until the veg begins to soften. If you're using pancetta, add it to the pan, turn up the heat and fry for a few mins more until turning golden brown. Tip in the cabbage and fry for 5 mins, then stir through the garlic, paprika and rosemary and cook for 1 min more.
- Tip the chopped tomatoes and stock into the pan. Bring to a simmer, then cook, uncovered, for 30 mins, adding the chickpeas for the final 10 mins. Season generously with salt and black pepper.
- Ladle the soup into six deep bowls. Serve with the shaved parmesan and crusty bread, if you like.

Steps:
- Melt butter in saucepan over medium heat.
- Add onion, celery, cabbage, salt, and pepper.
- Partly cover and cook for 10 minutes over a low heat.
- Add potatoes, chicken stock, and dill.
- Bring to a boil while stirring periodically.
- Boil, partly covered, for 20 minutes.
- Mix the flour with the sour cream in a bowl.
- Add 1/2 cup of the hot soup stock to bowl, mix well, and pour into soup.
- Mix well and serve.
