A simple recipe for barbecued halibut. Soy sauce and brown sugar add a special zip that is uncommonly delicious.

Steps:
- Preheat grill for medium-high heat.
- Place butter, brown sugar, garlic, lemon juice, soy sauce, and pepper in a small saucepan. Warm over medium heat, stirring occasionally, until sugar is completely dissolved.
- Lightly oil grill grate. Brush fish with brown sugar sauce, and place on grill. Cook for 5 minutes per side, or until fish can be easily flaked with a fork, basting with sauce. Discard remaining basting sauce.

- In a small bowl, combine the first seven ingredients. Place each halibut steak on a double thickness of heavy-duty foil (about 18 in. x 12 in.); top with soy sauce mixture, onion, lemon and butter. Fold foil around fish and seal tightly. , Grill, covered, over medium heat for 10-14 minutes or until fish flakes easily with a fork.

- In a small bowl, combine the first eight ingredients; let stand for 30 minutes. Spread 1 tablespoon herbed butter over each halibut steak., Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill fish, butter side down, covered, over medium heat or broil, buttered side up, 4 in. from the heat for 5-1/2 minutes. , Spread 1 tablespoon herbed butter over each halibut steak; turn and spread with remaining butter. - Preheat the oven to 400 degrees F (200 degrees C).
- Heat the olive oil in a skillet over medium heat. Add the onion, bell pepper, mushrooms, garlic and zucchini. Cover, and cook stirring occasionally, until the onions are translucent, about 5 minutes.
- Place halibut steaks into a shallow baking dish, and top with the sauteed vegetables. Season with basil, salt and pepper.
- Bake for 10 minutes in the preheated oven, then remove the dish, and cover the fillets with a layer of sliced tomato. Return to the oven, and bake for an additional 10 minutes, or until fish flakes easily with a fork.

- Brush lightly over the steaks.

BROILED STEAK WITH SHALLOT BUTTER
The original British recipe from a 'Housekeeper's Guide' of 1845 recommends 'catsup' instead of Worcestershire sauce. It is still possible to buy mushroom ketchup which is rather similar to Worcestershire sauce and this can be delicious with the shallot butter on any grilled steak.

- Rub the steaks on both sides with oil.
- Heat the broiler until it is glowing.
- Broil the steaks until just cooked to the point that you prefer, turning 2-3 times.
- Melt the butter in a small frying pan, add the vinegar and Worcestershire sauce, the shallots, salt and pepper.
- Heat through, without cooking the shallots, mix in the parsley and keep on one side.
- Put the steaks onto a heated dish and pour some of the shallot butter over each, when it will mingle with the juices.
- Serve at once with your favourite side dishes.

- FOR THE CHERMOULA: Process all of the ingredients together in a food processor until smooth, about 20 seconds, stopping to scrape down the sides of the bowl as needed. Transfer to a serving bowl and set aside. (The chermoula can be refrigerated in an airtight container for up to 2 days.).
- FOR THE HALIBUT: Adjust an oven rack to the middle position and heat the oven to 425 degrees. Pat the halibut dry with paper towels and season with salt and pepper. Heat the oil in a 12-inch ovenproof skillet over high heat until just smoking. Turn the heat to medium-high, carefully lay the steaks in the pan, and sear until spotty brown, about 4 minutes. Off the heat, flip the steaks over using two thin-bladed metal spatulas.
- Transfer the skillet to the oven and roast the halibut until the flesh is opaque and the fish flakes apart when gently prodded with a paring knife, about 9 minutes. Transfer the steaks to a carving board, separate the skin and bones from the fish with a spatula. Spoon 1 tablespoon of the chermoula over each piece of fish and serve immediately, passing the remaining chermoula at the table.

- Cut garlic in half and rub fish steaks with cut sides. Brush fish with three tablespoons of the olive oil.
- Broil the fish steaks under a preheated broiler about five minutes, turn and broil on the other side about three minutes longer. Fish should not be quite cooked through.
- Place a slice of tomato on each fish steak, brush with remaining olive oil and season to taste with salt and pepper. Broil two to three minutes longer, until the tomato is soft and beginning to brown around the edges. Remove fish steaks to a serving platter.
- To serve, place a slice of lemon centered on each tomato slice, top with two anchovies criss-crossed, sprinkle with parsley and place a black olive in the center. Serve at once.

- Rinse the halibut steaks in cold water and pat dry with paper towels.
- In a medium saucepan, heat the vegetable oil.
- Add the onion and cook over moderately-high heat until the onions are soft and very lightly browned, about 5 minutes.
- Add the cranberries, pear, sugar and water and stir to mix.
- Heat the berries over moderate heat, cover and cook, stirring occasionally, until soft, about 15 minutes; do not boil or the berries will cook to a puree.
- Stir in the cloves, salt and pepper and taste the compote for seasoning, adding more sugar if the cranberries are especially tart.
- Preheat the broiler, set the oven rack about 4 inches from the heat and lightly oil the broiler pan rack.
- Season each side of the halibut steaks with salt and pepper and set the steaks on the broiler rack.
- Broil the halibut for 3 to 4 minutes, turn the steaks and broil on the other side until the fish is just opaque through, 4 to 5 minutes longer.
- Meanwhile, reheat the compote and stir in the walnut pieces.
- Transfer the halibut steaks to individual dinner plates, spoon the cranberry compote partly over and alongside the halibut and serve immediately.
- Garnish with pear wedges or chopped walnuts if you like.
