No more corn muffin mix! I added chopped jalapenos and lots of grated cheddar cheese to these for last night's dinner of tomato-garlic soup and salad.

Healthy Sweet Corn Cakes image

Steps:

  • Preheat oven to 400°F (205°C).
  • Coat a 6-muffin tin with cooking spray.
  • Combine ingredients and pour into prepared muffin tins.
  • Bake for 16 to 20 minutes or until a toothpick inserted into cake comes out clean.

2/3 cup uncooked cornmeal
1/3 cup all-purpose flour
3 tablespoons dark brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon table salt
1/2 teaspoon ground cinnamon
2 medium egg whites, lightly beaten
3/4 cup apple juice
1 teaspoon apple cider vinegar
1 1/2 tablespoons canola oil
1 corn on the cob, about 1/2 cup of kernels

Steps:

  • Mix yogurt, water and egg together in bowl; add in cornmeal and baking powder and stir together until batter is moist.
  • If you like sweeter cakes, especially for breakfast, add Splenda at same time.
  • Let batter stand for 15-20 minutes.
  • Quickly fold in corn and grated onions.
  • Heat pan over medium heat and lightly coat with cooking spray; add batter to the pan in spoonfuls.
  • For best results, keep the cakes 2-3 inches in diameter.
  • Let first side cook until tops is dry around the edges; turn and cook other side.
  • Serve with a dollop of soft yogurt cheese.

I was searching for a shortcut alternative to Chi Chi's Fiesta Corn Cake when I saw how much the package cost in the stores. This is what I came up with and it was YUMMY!!! DH even like it and he isn't a corn bread fan at all.

Steps:

  • Mix all ingredients together in a bowl.
  • Pour into a greased 13 x 9 in pan.
  • Bake at 400 degrees for 20 to 25 minutes or until toothpick comes out clean.
  • Serve warm with butter on top.

Chi-Chi's Sweet Corn Cakes image

Steps:

  • With an electric mixer, beat butter or margarine until fluffy. Gradually beat in masa harina. On low speed, beat in water.
  • Place corn in the bowl of a food processor and pulse until chopped coarse. Stir in masa mixture.
  • In a small bowl, stir together sugar, cornmeal, cream, baking powder, and salt. Stir into corn mixture. Spread in a greased, 8-inch-square baking pan. Cover with foil. Place in a larger pan and pour boiling water half way up the side of the smaller pan. Bake at 350 degrees for 50 minutes or until set.
  • Remove smaller pan from water, uncover, and let stand 15 minutes.
  • Makes 8 servings.
