CREAMY SHRIMP SPREAD
A former co-worker shared this recipe with me. It's easy to make but so delicious-people keep coming back for more! The spread is also good served on crackers or fresh vegetables, and it can be served for any type of party, casual or fancy.

- In a small bowl, combine the cream cheese, ketchup, mayonnaise, onion, mustard and garlic salt. Stir in the shrimp. Cover and refrigerate for at least 1 hour. Serve with baguette slices.

Steps:
- Bring water to a boil; add shrimp, and cook 3 to 5 minutes. Drain well; rinse with cold water. Chill. Peel and devein shrimp. Chop half the shrimp. Chill chopped shrimp and remaining whole shrimp.
- Beat cream cheese at medium speed of an electric mixer until light and fluffy. Add lemon juice, mayonnaise, seasoned salt, lemon-pepper seasoning, and Worcestershire sauce, and beat until smooth. Spread mixture into a 10-inch circle on a large serving platter. cover and chill at least 30 minutes.
- Spread cocktail sauce evenly over cream cheese mixture. Layer chopped shrimp, Monterey Jack cheese, and remaining ingredients, except whole shrimp, over the cocktail sauce. Top with whole shrimp. Cover and chill thoroughly. Serve with assorted crackers.

- Mix together yogurt and salsa.
- Stir in the rest of the ingredients except garnish.
- Cover and refrigerate at least one hour.

CREAM CHEESE & SEAFOOD SPREAD
This is one of those recipes that when served to guests you had better have lots of it. It is a real crowd pleaser that your guests just can't stop eating. The beauty of it is that it is so simple to make with only three ingredients. You can double the recipe but use two plates instead of one. You will simply have two appetizers. If you take this appetizer to a potluck or party, spread the mixture on a sturdy plastic or styrofoam plate and you won't have to worry about getting your plate back. My personal preference to accompany this spread is Ritz or rice crackers but use what you like, you won't be disappointed.

- Spread softened cream cheese into the bottom of a 9" plate.
- A pie plate works well for this.
- Spread the seafood sauce on top of the cream cheese covering to the edges.
- Sprinkle imitation crab meat over the top.
- (genuine crab can be used for this recipe but the imitation works really well).
- Serve using little spreading knives (I suggest you have at least four of these knives) with assorted crackers.
- YUM!

- In a large bowl, beat the first nine ingredients until blended. Cut the top fourth off the loaf of bread; carefully hollow out bottom, leaving a 1/2-in. shell. Cube removed bread; set aside. Fill bread shell with seafood mixture. , Place on an ungreased baking sheet. Cover top edges loosely with foil. Bake at 350° for 25 minutes. CREAMY SEAFOOD STEW

- Heat the oil in a large frying pan and cook the onion and celery until soft but not coloured, about 10 mins. Throw in the garlic and cook for 1 min more. Pour in the wine and simmer on a high heat until most has disappeared.
- Pour in the stock and cornflour mix and simmer for 5-10 mins, stirring often until thickened. Season, then add the seafood and most of the dill. Simmer for a few mins until piping hot, then stir in the crème fraîche.
- Meanwhile, cook the garlic bread following pack instructions. Divide the stew into warm bowls and scatter with the remaining dill. Serve with garlic bread for dipping into the stew.

- In a bowl, combine the cream cheese, sour cream, and mayonnaise until well-blended. Spread into a 9x13 inch baking dish. Scatter the shrimp generously over the top of the mixture.
- In another bowl, stir together the cocktail sauce, green pepper, green onions, garlic, and tomato.
