SWEET POTATO (YAM) CASSEROLE WITH MARSHMALLOWS

This is a compilation of a couple of different recipes I found on the web. My husband loves sweet potatoes with LOTS of marshmallows and wanted a casserole like one of his aunts used to make. After a few trials, this was the final incarnation. It is now a Thanksgiving staple for both his and my family's dinners.

Sweet Potato (Yam) Casserole With Marshmallows image

Steps:

  • Spray 1 quart baking dish with Pam.
  • Heat oven to 350 degrees.
  • Mash yams in a large bowl and add brown sugar, salt, cinnamon, egg, and melted butter.
  • Mix well.
  • Place 1/2 mixture in baking dish.
  • Top with a layer of marshmallows, then add remaining mixture.
  • Bake for 30 minutes.
  • Remove from oven and top with remaining marshmallows.
  • Turn oven to broil and move casserole to the upper middle rack. Broil for approximately 5 minutes or until marshmallows are lightly browned.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl combine yams, melted butter, white sugar, evaporated milk, eggs, nutmeg, cinnamon and vanilla extract. Mix well and transfer to a 9x9 inch casserole dish.
  • In a medium bowl cream butter with brown sugar. Stir in walnuts and frosted cereal. Spread on top of yam mixture.
  • Bake in preheated oven for 35 minutes.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Poke yams in several places with a fork, then cook them on high power in microwave oven until heated through and soft, about 20 minutes. When cooled, remove skins and place the yams in a large bowl.
  • Beat yams until smooth. Then beat in one egg at a time, blending after each addition. Stir in 1/4 cup brown sugar, 1/8 cup melted butter, salt, cinnamon, allspice and nutmeg; beat until the mixture is light and fluffy.
  • Transfer mixture to an ungreased 3 quart casserole dish. Arrange the pecans in a single layer on top. Sprinkle with remaining brown sugar and drizzle 1/4 cup melted butter over the top.
  • Bake for 25 minutes in the preheated oven, or until browned and bubbly.

  • Combine the sweet potatoes, half-and-half, butter, brown sugar, nutmeg if using and 1/2 teaspoon salt in a large saucepan over medium-low heat and cook, covered and stirring occasionally, until the sweet potatoes begin to break down, 15 to 20 minutes.
  • Reduce the heat to low and continue to cook, covered, stirring occasionally and breaking up the pieces as you stir, until the sweet potatoes are completely tender and have almost entirely fallen apart, another 25 minutes.

  • For the sweet potatoes: Add 1 3/4 pounds peeled and cubed sweet potatoes to a large pot of salted water. Bring to a boil over high heat, then lower the heat to a simmer and cook until the potatoes are very tender, 15 to 20 minutes. Drain and cool. Mash the sweet potatoes.

  • Preheat the oven to 350 degrees F. Grease a 13- by 9- by 2-inch baking dish with margarine.
  • Peel the potatoes and yams. Place the potatoes and yams in a large pot of water. Bring to a boil; reduce the heat. Boil gently until the potatoes and yams are tender, about 20 minutes. Remove the potatoes and yams from the water. When cool enough to handle, slice into rounds and set aside. Peel, core and slice apples.

  • Adjust oven rack to middle position and heat oven to 400 degrees. Mix 3 tablespoons sugar and 1/2 teaspoon orange zest together in small bowl until thoroughly combined; set aside.
  • Lay two 24 by 12-inch sheets of heavy-duty aluminum foil perpendicular to each other inside rimmed baking sheet. Place sweet potatoes in center of foil and sprinkle with remaining 1 tablespoon sugar. Fold opposite sides of foil toward each other and crimp edges to seal tightly. Put baking sheet in oven and bake until sweet potatoes are tender, about 60 minutes. Remove baking sheet from oven and heat broiler.

Add butter, cream, orange juice, salt, cinnamon, remaining 1/2 teaspoon orange zest, pepper, and cayenne and process until completely smooth, 30 to 60 seconds, scraping down bowl as needed.
  • Transfer potato puree to 2-quart soufflé dish and sprinkle evenly with reserved sugar-zest mixture. Broil sweet potatoes until topping is lightly browned and bubbling, 2 to 4 minutes. Serve.
  • TO MAKE AHEAD: Processed potatoes can be refrigerated without topping for up to 2 days. To serve, cover dish with aluminum foil and bake on middle rack of 400-degree oven until hot throughout, 30 to 40 minutes. Remove foil, add brown sugar topping, and broil as directed in step 4.

Excellent Yam and Apple Casserole image

Steps:

  • Boil yams for 30 minutes or until tender yet firm. For a quicker method, poke holes in the yams and microwave on high for 10 minutes.
  • In a saucepan over medium heat, melt the butter with the cornstarch and brown sugar. Whisk in the apple juice, lemon juice, cinnamon, and allspice. Bring to a boil stirring occasionally. Boil 2-3 minutes. Set aside.
  • Preheat over to 375°F and lightly grease a 9x13-inch baking pan.
  • Peel cooked yams and cut into 1/3-inch slices.
  • Place a single layer of yams down into greased baking pan. Second layer will be your sliced apples. Repeat with another layer of yams.
  • Dump sauce over top of yams.
  • Cover pan with tinfoil and bake for one hour. Remove foil and continue baking for another half hour. Baste every half hour to prevent the yams and apples from drying out.
  • ENJOY!
