WHOLE WHEAT PUMPKIN BREAD
Nicely spiced with cloves, cinnamon, nutmeg, and pumpkin, this bread is moist and delicious! Makes 1 loaf or 18 muffins.

- Preheat the oven to 375 degrees F (190 degrees C).
- Place raisins in a bowl and pour in boiling water to cover by 1 inch. Allow to sit until raisins are plump and rehydrated, 3 to 4 minutes. Drain raisins, and reserve 1/3 cup of the soaking water in a separate bowl.
- Combine whole wheat flour, all-purpose flour, cinnamon, baking soda, baking powder, salt, cloves, and nutmeg in a large bowl. Combine pumpkin puree, sugar, eggs, reserved soaking water, and oil in another bowl; mix with a spoon or whisk until well combined. Stir pumpkin mixture into flour mixture until just moistened. Fold in walnuts and raisins. Pour batter into a 9x5-inch loaf pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 50 to 55 minutes. Allow to cool in the pan for 15 minutes then transfer to a wire rack.

YEAST FREE SUGAR FREE OIL FREE PUMPKIN WHOLE WHEAT BREAD
Though it might sound a little weird this is a really good bread here. I made if off of another bread recipe on recipezaar called yeast free sugar free bread recipe. I skipped the salt and used 1/4 cup of pumpkin per batch and it turned out just great! If you want to add salt, you can add 1 tsp. of celtic sea salt but it is not necessary. To make a ricer bread, use rice milk or some other natural nut milk for the liquids.

- Mix dry ingredients.
- Do not sift the flour!
- Mix liquids and add to dry. Stir until there is no more dry flour.
- Depending on the humidity of the air where you live you may need a little bit more or less liquid.
- The dough should be moist but not sticky. It may take a few minutes for the flour to fully absorb the liquid, so don't rush to add liquid or flour to it.
- Score lightly the surface in a diamond or X shape to prevent splitting of the crust.
- It is important not to overwork the dough.
- Shape into a ball or an oval, with oiled hands.
- Place in clean Bread Pan.
- Bake for 40 minutes at 400°F.
PUMPKIN WHEAT BREAD (A YEAST BREAD, NOT SWEET!)
Inspired by both the fall and my favorite Quest for Glory game that had garlic and avocado sandwiches made on pumpkin wheat bread, I wanted to make my own pumpkin wheat bread in my bread machine...that's an actual yeast bread made with pumpkin, not a quickbread or sweet type of tea loaf. Hence, the coriander for savory flavor instead of cinnamon or the other traditional pumpkin pie spices. Sage or thyme would make nice additions to this bread too that go with pumpkin. I use my own homemade bread flour that's AP flour and vital wheat gluten, and I always have lots of canned pumpkin on hand no matter what time of year it is! Prep time is the dough cycle, mine takes about 90 minutes.

- Put the ingredients into your bread machine according to manufacturer's directions, and do a dough cycle for 1.5-lb or 2-lb.
- Extract the dough from the machine and lay a piece of parchment paper down on a cookie sheet, shaping the dough into a loaf.
- Brush with the beaten egg and cover in pumpkin seeds (pepitas) to your liking.
- Bake at 375F for 30-35 minutes or until the top is nice and crispy.

GLUTEN-FREE, YEAST-FREE AND SUGAR-FREE "SCONE" BREAD :
For those of us who love bread and need to minimise or avoid gluten, yeast and sugar, here's a recipe to try. The taste and texture reminds me of SCONES... yes, scones! I love to have it sliced and toasted, with a ton of butter on top! I've been enjoying experimenting with gluten free and yeast free breads, combining and modifying different recipes (mostly from this website). This is the best that I've come up with so far. - Preheat the oven to 375°F.
- Combine all dry ingredients in a bowl. Make sure to mix thoroughly.
- Beat the eggs. Stir in the milk and vegetable oil.
- Add wet ingredients to dry ingredients and mix thoroughly. The consistency will be more like muffin batter than bread dough.
- Grease a bread pan and spoon the mixture into the pan. Do your best to distribute the mixture evenly, squishing out big air pockets. Smooth out the top of the mixture with the back of a spoon (a swirly pattern looks nice) as the batter will keep the form/shape it's left inches.
- Cook for about 1 hour, or possibly 5-10 minutes more, until a toothpick inserted into the centre of it comes out clean.
- Note: This also worked at 350F for about 1.5 hours.

- For a savory bread the liquid can be tomato juice and you can add chopped sundried tomatoes to the dough.
- Sprinkling of seeds in the dough or on top of the bread is also possible.

- In a large mixing bowl, whisk the oil and honey together until smooth. Add the Greek yogurt and the egg. Whisk again. Make sure the ingredients are smooth and well blended. Whisk in the pumpkin purée and vanilla.

- Preheat oven to 350°F. Grease and line an 8 x 4 inch baking loaf pan with parchment paper. If you don't have this size baking pan see notes for other options.
- In a large mixing bowl add oat flour and baking powder. Whisk until baking powder is evenly incorporated into the flour. If desired, you can also mix in 1/2 tsp salt. This will not affect the bread texture but will add a little more flavor to the bread. If you are trying to make a sweet bread, don't add the salt.
- Add in the yogurt. When adding in the yogurt, make sure to not drain out any of the liquid from the yogurt that may be at the top. You want to use that liquid in the bread.
