CANADIAN YELLOW SPLIT PEA SOUP WITH HAM

Creamy yellow pea soup studded with bits of ham, carrots, celery, and thyme. There is nothing like this one on a cold day! I am a Canadian now living in the US. and cannot get Habitant® soup anymore, so I came up with this version. I think it is as good as the real thing, if not better, because it is homemade.

Canadian Yellow Split Pea Soup with Ham image

Steps:

  • Place split peas, ham bone, carrots, onion, celery, thyme, bay leaf, salt, and pepper into a large pot; pour in water. Bring mixture to a boil and skim off any foam with a spoon. Reduce heat; place a lid on the pot slightly ajar to allow some evaporation. Simmer, stirring occasionally, until peas are tender and soup is thick, about 3 hours.
  • Remove ham bone from soup; strip meat from ham bone, chop meat, and return it to the pot.

2 ½ cups yellow split peas
1 ham bone with some meat
4 carrots, diced
½ large Spanish onion, diced
5 stalks celery, diced
2 teaspoons dried thyme
1 bay leaf
2 tablespoons kosher salt
1 pinch ground black pepper, or to taste
8 cups water, or as needed

YELLOW SPLIT PEA SOUP--VEGETARIAN/VEGAN

This is from a veg cookbook purchased on the checkout lane at the grocery store but I'm not sure which. It is a lovely soup, and it gets better over a day or so. The ingredient list appears lengthy, but it is largely due to the yummy combination of spices. The original recipe calls for a combination of any veggies as long as you reach 4 cups (or a 16 oz bag of frozen veggies). I list specific veggies here as they are the ones recommended in the recipe.

Yellow Split Pea Soup--Vegetarian/Vegan image

Steps:

  • In a medium pan bring water and salt to a boil; add split peas and return to boiling. Reduce heat and simmer, covered, about 45 minutes or until tender. Do not drain.
  • Meanwhile, steam vegetables until crisp tender.
  • In a small skillet, cook curry powder, cumin, turmeric, ginger, and red pepper in hot oil for 1-2 minutes or until fragrant.
  • In a food processor or blender combine the undrained split peas and the spice mixture. Process until combined. If too thick, add water or warm broth. Transfer back to the medium saucepan and stir in the steamed vegetables. Heat through and serve.
  • FOR WHAT IT'S WORTH--I highly recommend just leaving the split peas in the pan, adding spices, and using an immersion blender! Much simpler, and fewer dishes to wash :).

Steps:

  • In a large saucepan, saute onion and celery in oil and butter until tender. Add broth; bring to a boil. Add peas; return to a boil. Reduce heat; cover and simmer for 1 hour or until peas are tender. , Stir in lemon juice, cumin and pepper; simmer for 5 minutes. In small batches, puree soup in a blender; return to the pan. Heat for 4-5 minutes. Garnish with parsley and pistachios.
