DUTCH APPLE CAKE
This is another great cake for the fall. When apples are plentiful and delicious there are so many ways to thank mother nature for its bounty. I pick a lot of the wild apples in the fall, and turn them into great desserts.

Steps:
- Sift flour with baking powder and salt.
- In a large bowl, cream shortening and 1 cup sugar until light. Beat in egg and vanilla until fluffy. Add sifted ingredients to the creamed mixture alternately with milk, beginning and ending with the sifted ingredients. Spread the batter into a greased 7 x 11 inch baking pan.
- Place apple pieces in rows on the batter with the sharp edges pressed in slightly. Sprinkle 1/4 cup sugar and cinnamon on top.
- Bake at 350 degrees F (175 degrees C) for about 50 to 60 minutes, or until the apples are tender and the cake tests done.

DUTCH APPLE DELIGHT
Served warm, this old-fashioned dessert of a simple cake topped with apples, walnuts, cinnamon and shredded Cheddar is sure to please the whole family.

- Preheat oven to 375°F. Beat butter and brown sugar in large bowl with electric mixer on medium speed until light and fluffy. Add egg; mix well. Combine flour, baking powder and 1/2 tsp. of the cinnamon. Add to brown sugar mixture alternately with the milk, mixing well after each addition. Stir in 1/2 cup of the cheese. Pour into greased 8-inch square baking pan.
- Mix apples, granulated sugar and remaining 1/2 tsp. cinnamon. Spoon evenly over batter; sprinkle with walnuts.
- Bake 35 min. or until toothpick inserted in center comes out clean. Sprinkle with the remaining 1/2 cup cheese. Cut into 9 squares. Serve warm.

Steps:
- Preheat oven to 350 degrees.
- In a 1 1/2 quart baking dish, melt butter in oven.
- Sprinkle with crumbs, combine with butter, and press onto bottom of dish to make crust.
- In bowl, mix together condensed milk, sour cream, and Realemon.
- Spread evenly over crumb crust.
- Spoon apple filling over creamy layer.
- Bake at 350 for 25-30 minutes or until set.
- Cool slightly.
- Mix together nuts and cinnamon.
- Sprinkle over top.
- Serve warm or cold.
- Refrigerate any leftovers.
DUTCH APPLE DESSERT
This dessert is so incredibly easy - the hardest part is to patiently wait for this to bake while the heavenly aroma of apples and cinnamon fill your kitchen!! Fresh sliced appples are tossed with spices, Eagle Brand sweetened condensed milk and biscuit mix, poured into a pan and sprinkled with a crumb topping.

- With food processor, mix butter and biscuit mix until crumbly. Stir into apple mixture. Pour into parchment paper lined 9" square baking dish.
- TOPPING: With food processor, mix biscuit mix, brown sugar and butter until crumbly. Stir in nuts. Sprinkle evenly over apple mixture.
- BAKE: Bake in preheated 325F oven until golden, about 1 hour. Cool slightly on wire rack. Serve warm with ice cream if desired.
- NOTES: For best results use baking apples such as Cortland, Empire, Golden Delicious or a combination of all three.

Steps:
- Set oven to 350 degrees.
- Grease a 9 x 12 OR a 9 x 13-inch baking pan.
- In a medium bowl, combine the sugar, eggs, oil and the orange juice; beat well.
- Combine the flour and baking powder in a small bowl.
- Add to the egg/oil mixture slowly; kneading in the flour to make a soft dough (you might use less than 3-1/2 cups of flour).
- Divide the dough in half.
- Transfer to a lightly floured surface.
- Roll out into a 9x12 rectangle, and place in the bottom of the baking pan (if using a 13x9in pan, roll out the dough to one more inch).
- Top with sliced apples (which have been tossed with 1/2 cup sugar and 2 tsp cinnamon).
- Roll out the remaining dough, and cover the apples with the dough.
- Sprinkle the dough with 2 Tbsp sugar (or more if desired).
- Bake for 40-45 minutes, or until lightly browned-- delicious.

DUTCH APPLE CAKE DESSERT
This makes a deliciously moist yet light sponge desert and is perfect served with pouring of double cream. A good alternative to apple pie. I make it without the cinnamon as my husband doesn't like the taste, and it is very good.

- Preheat the oven to 200c/390f/gas mark 6. Line a cake tin with greaseproof paper.
- Using a whisk (electric or manual), whisk the eggs, caster sugar and vanilla extract in a large bowl until the mixture is thick and mousse like and the whisk leaves a figure of eight pattern.
- Melt the butter in a saucepan with the milk, then pour onto the egg and sugar mixture, whisking all the time. Sift the flour, cinnamon and baking powder and fold carefully into the mixture so that there are no lumps of flour. Pour the mixture into the prepared tin and smooth the surface.
- Arrange the apple slices over the batter (they will sink during cooking). Sprinkle over a tablespoon of sugar and bake in the oven for 10 minutes, then reduce the oven temperature to 180c/350f/gas mark 4 and bake for a further 20-25 minutes or until well risen or goldne brown.
- Remove the cake from the oven and allow to cool a little. Serve warm with double cream. Any left overs can be eaten cold or can be warmed in the microwave well, just for a few seconds.
