ZAUGG FAMILY CHILI

I do all our home canning and this recipe is geared towards using those jars! I am able to use canned tomatoes and black beans so the ingredients will reflect either pints or quarts for measurements. This recipe freezes well.

Zaugg Family Chili image

Steps:

  • In large saucepan brown beef and onion until meat is done. Drain.
  • Add remaining ingredients. Simmer for 20 minutes until heated through and slightly thickened.
  • Serve with shredded cheese, sour cream and tortilla chips if desired.

1 lb ground beef
1 large onion, chopped
2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
1/8 teaspoon cayenne, add more if you like
1 quart homecanned tomatoes
1 quart black beans or 1 quart beans, of your choice
3/4 teaspoon salt
1 teaspoon black pepper
1 teaspoon sugar

Steps:

  • Heat 2 cups of the milk to boiling point.
  • Add the meal slowly, stirring until thick.
  • Remove from heat and slowly add to the beaten eggs.
  • Add the butter and remaining milk.
  • Sprinkle baking powder and salt on top and stir.
  • Bake in a greased casserole dish for 55 minutes at 350°F.
  • When done, it should still be soft enough in the center that you need to serve it with a spoon, but brown on the outside edges.
  • ENJOY!

  • In bread machine pan, place all ingredients in order suggest by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed).

Harry's Whole Grain No Knead Dutch Oven Bread image

Steps:

  • In a large bowl, dissolve yeast in water. Add the flours, and salt. Stir until well blended. The dough should be shaggy and sticky. Let rise overnight, at least 12-18 hours, for best results.
  • Flour a work surface. Fold dough over itself once or twice. Place the dough, seam side down, on a floured kitchen towel. Cover with another floured kitchen towel.Let the dough rise at room temperature for 1-2 hours.
  • Preheat the oven 20 minutes before the dough is ready to 475 degrees. Put the dutch oven into the oven. When dough is ready, take out the dutch oven, and then using the kitchen towels, flip the dough into the pot, seam side up. Shake the pot if the dough loses it's shape.
  • Cover and bake for 30 minutes. Uncover and bake for 15-20 minutes, or until the dough is turned golden brown. Cool on a wire rack, and enjoy!
