TEXAS COWBOY STEW
Hearty, filling and man-pleasing describes this stew. Link sausage, cumin, chilies, and chili powder is what gives this soup its Southwest flavor. This dish is quick, easy, and tastes best when it simmers in a slow cooker or even on the stove all day. Bake some Mexican cornbread, toss a simple green salad, and you have a great meal.

Steps:
- Crumble the ground beef into a large skillet over medium-high heat. Add the sausage, garlic and onion; cook and stir until the meat is no longer pink. Drain off grease, and transfer the contents of the skillet to a large pot.
- Pour the tomatoes into the pot with the meat, and stir in the potatoes, pinto beans, corn, diced tomatoes with chilies, mixed vegetables and water. Season with cumin, chili powder, salt and pepper. Cover, and simmer over medium-low heat for at least 1 hour. Stir occasionally. The longer this stew cooks, the better it gets.

I made up this dish back in the early 1970s when I was down to very little food in the house. Since it's combination of barbecue sauce, hamburger, hot dogs and beans, this one-skillet meal makes both children and adults happy.

- In a Dutch oven, cook beef over medium heat until no longer pink; drain. Stir in the remaining ingredients. Bring to a boil. Reduce heat; cover and simmer for 4-6 minutes or until flavors are blended.

Steps:
- Brown ground beef; drain.
- Place ground beef in crock pot. Add tomato sauce and water, tomatoes, BBQ sauce, green beans, corn and potatoes. You may need to parboil the potatoes if you are cooking the dish only 4-5 hours.
- Place carrots and water in a microwave and cook for 4 minutes, or until tender. Put carrots in crock pot.
- Add minced onion. Shake some garlic powder and Adobo over the contents. Add salt and pepper to taste.
- Cook on low 8-10 hours or on high for 4-5 hours.

- Layer the potatoes, carrots, onion and celery in a 5-qt. slow cooker. Place flour in a large shallow dish. Add stew meat; turn to coat evenly. In a large skillet, brown meat in oil in batches. - Preheat oven to 425°. Remove papery outer skin from garlic bulb, but do not peel or separate the cloves. Cut off top of garlic bulb, exposing individual cloves. Brush cut cloves with 1 teaspoon oil. Wrap in foil. Bake until cloves are soft, 30-35 minutes. Unwrap and cool slightly. Squeeze garlic from skins; mash with a fork., Meanwhile, in a large dry skillet over medium-high heat, toast chilies on both sides until puffy, 3-6 minutes. (Do not blacken.) Cool. - Heat the olive oil in a skillet over medium heat, and brown the beef on all sides. Remove from skillet, reserving juices, and season with salt and pepper. Cook and stir the garlic, ginger, and jalapeno in the skillet for 2 minutes, until tender, and season with curry powder. Mix in the diced tomatoes and juice.
- Place the onion in the bottom of a slow cooker, and layer with the browned beef. Scoop the skillet mixture into the slow cooker, and mix in the beef broth.

- Add cumin, ground chili, black pepper, salt, garlic and flour. Turn off burner, stir to combine and place meat mixture into bottom of crockpot. (I use a 6 quart)
- Add in sausage rounds, potatoes, baked beans, diced tomatoes, diced green chilis (or 1 can or rotel tomatoes), corn, parsley and beef broth. Mix well to combine.
- Place lid on crockpot. Cook on low for 6-8 hours or on high for 4-6 hours. Monitor liquid level if you want it more soupy. This will make a nice thick stew liquid level.
