ITALIAN SAUSAGE FRITTATA
This can be served for breakfast, brunch, lunch or dinner. It's a fairly simple recipe with ingredients that are easily found in the grocery store! I personally use the Spicy Turkey Italian Sausages when making this recipe although it calls for mild.

Steps:
- Preheat oven to 350 degrees.
- Brown sausage in sauce pan and drain.
- Spread evenly over bottom of 9 x 13 baking dish.
- Sauté mushrooms and garlic in butter until almost all liquid is absorbed (you can add a few dashes of white wine at this stage if you prefer.
- Spread mushrooms over sausage.
- Layer swiss chard and cheese over mushrooms.
- In bowl beat the eggs, milk and Dijon mustard and pour evenly over all.
- Place in oven on middle rack, bake uncovered for 1 hour, (or until middle is firm to touch).
- Remove from the oven, cover loosely with foil, and let stand 15-18 minutes. Divide and cut into serving sizes.
- Top with green onions or sour cream (or both) if you desire.

SAUSAGE AND PEPPER FRITTATA

- Preheat the oven to 350˚. Coat a 10-inch ovenproof nonstick saute pan with the olive oil. Add the sausage and cook over medium heat until browned, 3 to 4 minutes. Add the bell peppers and sauté until tender, about 5 more minutes.
- Whisk the eggs and 1/4 cup water in a large bowl. Add the cheese and season lightly with salt. Using a heatproof rubber spatula, stir the eggs into the pan with the sausage and peppers until evenly distributed. Cook the frittata until the eggs are set on the bottom and around the sides of the pan, about 4 minutes.
- Place the pan in the oven and bake until the eggs are cooked through, about 15 minutes. Remove the frittata from the pan and cut into wedges. Serve hot or at room temperature.
BAKED ZITI WITH ITALIAN SAUSAGE

- Cook sausage links according to package directions; drain, cut into ¼-inch slices.
- In a large bowl, combine sausage slices, pasta, pasta sauce, water, basil, garlic, Parmesan cheese, pepper and mix well.
- Spoon mixture into a greased 9-in. x 13-in. x 2-in. baking dish.
- Arrange garlic bread slices on top of meat mixture.
- Sprinkle evenly with mozzarella cheese.
- In a small bowl, dip tomato slices into olive oil.
- Place one slice of tomato on each piece of bread.
- Bake uncovered, at 400°F for 25-30 minutes or until heated through. Remove from oven and let rest for 5 minutes before serving.
- Garnish with basil leaves. Serve.

- Beat eggs, half-and-half, sour cream, 2 Tbsp. basil and pepper until blended.

- Preheat broiler.
- Heat cast iron skillet with 1 tbsp oil on stove.
- Add onion, pepper, sauté over medium heat 4 minutes.
- Meanwhile beat eggs, milk, seasonings in bowl or large measuring cup.
- Add potatoes to pan salt and pepper to taste, sauté another 6 minutes.
- Add sausage to pan, sauté another minute.
- Turn down heat to medium low, add other tbsp oil, pour in egg mixture, sprinkle spinach on top.
- Cover and cook 10 minutes.
- Remove lid, with rubber spatula, loosen egg from sides of pan.
- Sprinkle tomato, cheese on top.

- Heat the olive oil in an oven-safe, 10-inch nonstick skillet over medium-high heat. - Mix up the Italian Dressing as per the instructions on the package (I usually add a little extra water, but that's up to you). It is also good to use raspberry flavored vinegar.
- Add honey to the dressing and shake/mix well.
- Brown the sausage, drain and set aside (keeping warm, but not hot).
- In the meanwhile place the lettuce on the bottom of a big bowl.
- Top with the tomatoes, both types of beans, green onions and finally the cheese.
- Top the salad with the warm sausage.
- Pour 3 or 4 turns of the dressing over the salad and mix well with tongs. Add more dressing if you like, but be forwarned that a little dressing goes a long way with this salad.

- In a large saucepan, bring 1/2 in. of water to a boil. Add spinach; cover and boil for 3-5 minutes or until wilted. - Preheat the oven to 450°F.
- Saute sausage in oil in a 10"nonstick ovenproof skillet over medium-high heat until nearly cooked through, about 3 minutes.
- Add onion and cook 2 more minutes, or until onion is softened.
- Stir in spinach, tomatoes, salt and pepper. Cook 1-2 minutes.
- Remove and set aside.
- Wipe out skillet and coat generously with nonstick spray.
- Combine eggs, cream, and salt in a blender until frothy.
- Pour egg mixture into the hot saute pan and cook over medium heat just until curds form, stirring constantly.
