DEUTSCH ZWIEBELKUCHEN (ONION PIE)

This is an onion pie from south-central Germany. It is served in the fall when the local winemakers open a cafe-like area called a Besenwirtschaft in their barn or garage to serve the new wine for a small fee. DEUTSCH ZWIEBELKUCHEN (ONION PIE) image

Steps:

  • 1. Place the prepared dough in a large pizza pan, making sure dough extends up the sides of the pan.
  • 2. In a large skillet, saute the onion until translucent and pour the cooked onion into a large mixing bowl. (May have to saute in several shifts.)
  • 3. Place the bacon in the same skillet and cook over medium-high heat until evenly brown. Drain, chop and add to onion; mix well.
  • 4. Stir in the sour cream. In a separate bowl, beat eggs to break up yolks; mix into pie mixture. Add flour to thicken; add salt.
  • 5. Mix well and pour mixture into prepared pan. Sprinkle top with caraway seeds.
  • 6. Bake in a preheated 425-degree oven for about 1 hour, or until onions start to turn golden brown on top.

6 lb onions, sliced
4 slice bacon
16 oz sour cream
4 eggs
2 Tbsp all purpose flour
1/2 tsp salt
1/2 tsp caraway seeds
1 pkg pastry for 9" double-crust pie

Zwiebelkuchen (Onion Pie) image

Steps:

  • 1. Pastry, Combine flour, baking powder, and salt. Chop in the butter by pastry blender or 2 knives, until mealy. Add the egg. Blend until consistency of pie dough. Add cream if dough is not sufficiently moist.
  • 2. Working lightly, pat into the bottom and sides of a 9 inch round layer cake pan. Brush egg white over bottom of crust, This prevents crust from becoming soggy.
  • 3. Filling: Cook the onions and bacon in butter until very soft. Add salt and caraway seed. Stir in flour, then slowly add cream. Remove from heat
  • 4. Add a little of the mixture to beaten eggs, then combine the two. Spoon into pastry lined cake pan. Bake in oven preheated to 375 F until pastry is crisp and golden and filling is firm. Serve hot from the oven

2 c sifted all purpose flour
1 tsp baking powder
1/2 tsp salt
3/4 c butter
1 medium egg, beaten
1 Tbsp cream, optional
1 unbeaten egg white
FILLING
2 c chopped onion (sweet onions 4 large)
2 slice bacon, diced
2 Tbsp butter
1/4 tsp salt
1 tsp caraway seed
1/2 Tbsp flour
1/2 c heavy cream
2 medium eggs, beaten

ZWIEBELKUCHEN (SAVORY BACON-AND-ONION TART)

German Zwiebelkuchen is almost a meal in itself and is relatively fast to make. It has a slightly sweet base, with a savory topping made from eggs, sour cream, onions, bacon, caraway seeds, and salt. The bottom is crisp and crunchy, the middle tender and spongy, and the topping succulent with juicy onions and bacon.

Zwiebelkuchen (Savory Bacon-and-Onion Tart) image

Steps:

  • Place milk and 4 tablespoons butter in a small saucepan, and heat until butter has melted. Remove pan from heat, and let mixture cool until tepid.
  • Place milk mixture in the bowl of an electric mixer fitted with the paddle attachment. On low speed, add the sugar, 1/2 teaspoon salt, lemon zest, egg yolks, and yeast. Gradually add 3 cups flour, creating a dough that is soft but not sticky.
  • Turn dough out onto a floured surface, and knead until it is smooth and elastic and springs back when you poke it with your finger, about 5 minutes. Place in a large buttered bowl, and cover tightly with plastic wrap. Set in a warm place until dough has doubled in bulk, about 1 hour.
  • Heat oven to 400 degrees. Line an 11-by-17-inch baking sheet with parchment. Punch dough down, and roll out to a 1/4-inch thickness. Place on prepared baking sheet, and cover with buttered plastic wrap; let rise until dough doesn't spring back when you poke it with your finger, about 20 minutes.
  • Melt remaining tablespoon butter in a large skillet over medium heat. Add the bacon, and cook until golden and crisp and most of fat has been rendered, about 6 minutes. Add onions, and cook, stirring occasionally, until translucent, 8 minutes. Reduce heat to low. Sprinkle 1 1/2 teaspoons flour over onions, and stir in. In a small bowl, whisk together sour cream and the egg, and stir into the onion mixture. Cook, stirring, until mixture thickens, about 1 minute. Remove skillet from heat, and season with salt.
  • Spread mixture on top of dough, and let rise 15 minutes more. Sprinkle top with caraway seeds. Bake until edges are crisp and brown, about 30 minutes. Transfer to a wire rack to cool, and serve. Bread will keep, wrapped and unrefrigerated, up to 4 days.

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Line a jelly-roll pan or large pizza pan with prepared dough, making sure dough extends up sides of pan.
  • Saute onion in a until translucent and pour cooked onion into a large mixing bowl.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown.

Steps:

  • Preheat oven to 400º F.
  • Saute bacon.
  • Drain most of the fat from the pan.
  • Add the onions and saute until clear.
  • Do not brown.
  • Set aside to cool.
  • Beat the eggs and sour cream together in a medium-sized bowl.
  • Sprinkle the flour over the top and beat it into the sour cream mixture.
  • Stir in the salt and pepper.
  • Prick the bottom of the pie shell several times with a fork.
  • Spread the onions and bacon over the bottom of the pie shell.
  • Pour the sour cream mixture over the top.
  • Bake for 15 minutes.
  • Reduce heat to 350ºF.
  • and bake for another 15 minutes or until pie is nicely browned.
  • Serve hot!
