SOUTHERN-STYLE BAKED BANANA PUDDING
If you like banana cream pie, you'll absolutely love baked banana pudding. Not only is there no pie crust to mess with, but I think the vanilla wafer cookies pair even more perfectly with the fruit and custardy pudding. We want the bananas to match the texture of the custard-soaked cookies, so make sure you buy them a week beforehand. Other than that, not much can go wrong with this simple Southern classic.

- Separate eggs, placing the whites in the bowl of a stand mixer and the yolks into a saucepan.
- Add sugar, salt, and 1/3 cup plus 1 tablespoon flour to the yolks. Splash in about 1/4 of the milk and start blending mixture with a whisk. Pour in remaining milk and whisk until smooth.
- Cook and stir mixture over medium heat until hot to the touch, occasionally dipping your finger in to test. Whisk constantly until custard is thick enough to form ribbons.
- Remove custard from heat and add vanilla extract, banana liqueur, and cold butter. Whisk until butter dissolves. Set custard aside.
- Preheat the oven to 400 degrees F (200 degrees C).
- Toss banana slices with lemon juice.
- Spread a quarter of the custard over the bottom of a baking dish. Add a single layer of vanilla wafers. Cover with 1/2 of the bananas and spread 1/2 of the remaining custard on top. Add another layer of vanilla wafers, using slightly fewer this time. Top with the remaining bananas and custard. Smooth the top and tap dish against the counter to settle the pudding.
- Add cream of tartar to the egg whites. Beat using the whisk attachment until foamy. Gradually add sugar and beat until stiff, but not dry, peaks form. Spread meringue over the pudding using a soft spatula, creating ridges for contrast.
- Bake in the preheated oven until meringue is nicely browned, 7 to 10 minutes. Serve warm or chilled.

ÜBER-QUICK BANOFFEE PUDDING / DESSERT
I love this when I'm home alone for dinner and can't be bothered to make a proper dessert for one, or for when I need a quick sugar fix. This is really quick and easy and is SO yummy. You could easily multiply the ingredient amounts up to serve any number of people, however the presentation means you'll probably only ever want to serve it to family rather than company.

- Pre-heat your oven to 200c / 400f.
- Slice up the banana and place it on an over-sized sheet of tin foil.
- Dot the two tablespoons of dulche du leche over the top of the bananas.
- Bring the opposite corners of the foil together to make a little banana parcel.
- Bake in the oven for approximately 15 minutes.
- While the banana is cooking, break your two digestive biscuits / graham crackers into little pieces in a bowl.
- When the bananas are cooked, empty them and the dulche du leche out onto your digestive biscuits / graham crackers and mix well.
- Leave to cool for a minute or so and then eat it all up while it's nice and hot!

Steps:
- Crush the digestive biscuits, either by hand using a wooden spoon, or in a food processor, until you get fine crumbs, tip into a bowl. Mix the crushed biscuits with the melted butter until fully combined. Tip the mixture into a 23cm loose bottomed fluted tart tin and cover the tin, including the sides, with the biscuit in an even layer. Push down with the back of a spoon to smooth the surface and chill for 1 hr, or overnight.
- Beat the caramel to loosen and spoon it over the bottom of the biscuit base. Spread it out evenly using the back of a spoon or palette knife. Gently push the chopped banana into the top of the caramel until the base is covered. Put in the fridge.
- Whip the cream with the icing sugar until billowy and thick. Take the pie out of the fridge and spoon the whipped cream on top of the bananas. Grate the dark chocolate over the cream, if you like, and serve.

- To make the dulce de leche preheat the oven to 220 celsius (425 Fahrenheit) and pour the condensed milk into a casserole dish and sprinkle with sea salt and stir to combine. Covering with a tight fitting lid or foil and place the casserole dish inside a large roasting pan and fill with water so that the water level is ½ the height of the casserole dish. Bake for 90 minutes until golden. Set aside to cool completely. If your dulce de leche appears lumpy after it comes out of the oven don’t panic. Use an immersion (stick blender) to blend until smooth and glossy.
- Heat a large frying pan over a medium low heat and add the butter. Once the butter has melted add the banana slices (you may have to cook the bananas in a couple of batches) and fry until softened. Remove from the heat and set aside to cool.
- Take 6 small glasses and divide the dulce de leche between them. Top with the banana slices and set aside.
- In a small saucepan add the flour and sugar and whisk in a small amount of milk and combine until a smooth paste forms. Add the remaining milk and whisk and place over a medium low heat. Whisk until the mixture thickens. This can take some time, you don't need to whisk all the while, but do keep an eye on the mixture and whisk now and again to prevent lumps forming.
