Steps:

  • In a small bowl, mix mayonnaise and mustard; spread over four bread slices. Layer with cheeses, tomato, onion and bacon. Top with remaining bread. Butter outsides of sandwiches., On a griddle, toast sandwiches over medium heat until golden brown and cheese is melted, 2-3 minutes on each side.

Open Faced Bacon Tomato Pepperoni & Cheese Broil image

Steps:

  • 1. Pre heat Broiler. Place bread on broiler pan or heavy cookie sheet and place under broiler to toast lightly. Place 2 slices of tomato on each halve of bread. Salt & pepper; place back under broiler so that the tomato just begin to warm, about 1 to 2 minutes.
  • 2. Lay slices of bacon & pepperoni on top of the tomato.
  • 3. Now, cover the top with slices of cheese. Sprinkle with Italian seasoning.
  • 4. Return to broiler and cook until the cheese melts and just starts to bubble, watch closely so that it doesn't burn, another 1 to 2 minutes. Serve immediately.

INGREDIENT ARE FOR 1 - DOUBLE OR TRIPLE FOR MORE
1 large ciabatta roll - split - sandwich size, not loaf
4 slice ripe tomato
2 slice bacon, cooked & drained
8 slice pepperoni
4 slice provlone or mozzarella cheese
sprinkle italian seasoning
salt & pepper

Bacon Cheese & Tomato - Broiled Open Face Sandwich image

Steps:

  • Pre-heat broiler.
  • Place bread on a broiler safe pan. Top each slice of bread with a slice of cheese then a slice of tomato. Depending on how big your tomato slice is you may want to put on two but keep it a single layer of tomato. Cut each slice of bacon into 2 pieces. Then lay 3 of the pieces on each sandwich. Broil until bacon is crisp and cheese melted. Bread and cheese may get a little burnt. That makes it better!
  • Note: Originally I put raw bacon on the sandwich and cooked it all the way under the broiler. Now I cut the strips in half and partiality cook in micro-wave and then put on sandwich and broil to finish cooking.

Oven Grilled Bacon Cheddar Sandwiches image

Steps:

  • 1. Preheat oven to 375 degrees F. Line a baking sheet with aluminum foil and set aside.
  • 2. Butter one side of each piece of bread. Place 4 slices, buttered-side down, on prepared baking sheet. Layer half of cheese slices on bread followed by bacon and scallions. Place remaining cheese slices on top. Cover each sandwich with remaining 4 slices of bread, buttered side up.
  • 3. Bake sandwiches until bottoms are a toasted golden brown, about 10 minutes. Flip and continue to bake until cheese melts and other side is toasted, 8 to 10 more minutes. Serve immediately.

6 tablespoons unsalted butter, room temperature
8 slices potato sandwich bread

Steps:

  • Spread 3 tablespoons butter on one side of each slice of bread. Place bread, butter side down, in a large skillet or electric griddle over medium-low heat until golden brown, 2-3 minutes; remove. In a small bowl, combine cheddar, Monterey Jack and Gruyere.
