MARGARITA ICE CREAM
This is a cinch to make, and easy-easy-easy to eat. It is, now that I come to think of it, in effect a no-churn version of the ice cream in Forever Summer. If you want to serve it in glasses dipped in sugar and salt, by all means do. But it is so good, that even as someone is not a committed ice cream eater and no kind of a drinker, I find I can spoon it straight into my mouth from the container I've chilled it in. In other words: no decorative touches or embellishments are remotely needed. This is truly the express way to dessert-deliriousness.

FABULOUS FAT-FREE FRUIT SORBET
This is such a wonderful summertime treat! I have used all kinds of fruit combinations in this; use your imagination. Far richer and intense in flavour than anything you can buy, and yet it's almost all just healthy fruit. The fruits that work best have a fairly smooth fleshy texture; things like mangoes, muskmelons, peaches, apricots, and bananas. But also good are strawberries, pineapple, blueberries and the like. Seedy or watery fruits can be used, but it is best to use them mixed with something that has a smoother denser texture, and to use less of them. Cook time is tempering time, but prep time does not include freezing time.

Steps:
- Prepare the fruit by peeling, if necessary, and cutting it into chunks.
- Place on a plate or tray covered with plastic wrap.
- Make sure everything is as spread out as possible.
- Cover with more plastic wrap.
- Freeze overnight.
- Whiz the fruit through a food processor until very finely chopped.
- Add the sugar and lemon juice, adjusting either according to the sweetness and acidity levels of the fruit you are working with; if you use pineapple use orange juice or water instead of lemon or lime juice and add a little vanilla extract if it seems appropriate.
- Feel free to taste the mixture!
- Blend thoroughly, until very smooth. Scrape down the sides of the food processor regularly.
- This may take up to five minutes.
- Spoon into serving dishes or a covered storage tub and return to the freezer until dessert time.
- Put in the fridge to temper 15 minutes before serving.

- Pour 1 cup of water (236 ml) into a small saucepan over medium high heat, then mix in 1 cup of sugar (200g) until it dissolves. Pour it into a shallow container and put in the freezer for 10 minutes to speed up the cooling process.
- Wash and dry 9 limes and 2 lemons. Grate the zest of one lime, then mix it with the margarita salt and spread on a plate. Wedge the lime and run a wedge around the rim of the glass, then twirl the rim in the salt until coated. Repeat with the remaining glasses.
- Roll 6 limes on the counter, applying pressure with your hand to soften them. (Set aside the other three for garnish.) Cut the rolled limes in half and microwave them on high for 30 seconds to make them easier to juice. Juice the limes and lemons with a citrus press.
