ADD INS BREAD

I bought this 'local' recipe book from a church in Firebaugh Calif. I've enjoyed many of the recipes the Women put together...this one has been a family favorite. You can make it different everytime, but our favorite Banana Bread comes from this recipe!

Steps:

  • Sift dry ingredients; set aside. Beat eggs in a large bowl. Add oil and sugar; cream well. Add 'add ins' and vanilla. Add dry ingredients. Mix well. Add nuts.
  • Spoon into 2 well greased loaf pans. Bake in preheated oven at 325 degrees for 1 hour.
  • *Makes 2 Large Loafs -- but at Holiday time, I use the small foil pans for gifts -- usually 5 at a time!

3 teaspoons cinnamon (optional depending on 'add ins' you use)
3 eggs
2 cups sugar
1 teaspoon vanilla
1 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup vegetable oil
1 cup chopped nuts
2 cups fruit
apple, grated
applesauce
apricot, chopped
banana, mashed
carrot, grated
cherries, pitted and chopped
dates, chopped
eggplant, ground up
fig, chopped
marmalade (reduce sugar to 1 cup)
mincemeat
orange, chopped
peach
pineapple, crushed and well drained
pumpkin
raisins
raspberries
rhubarb
yam, cooked and mashed
zucchini, grated and drained

CORNBREAD

I love tasting different cornbread recipes, and I have to admit, I think this is the best that I've ever tasted. Usually I have to put tons of butter on it, because it's so dry and just doesn't have much taste to it, but this recipe is very moist, and you can eat it alone, it's got a great sweet taste to it. Steps:

  • Heat oven to 400³F.
  • Grease bottom and side or round pan, 9x1 1/2 inches, or square pan, 8x8x2 inches, with shortening.
  • Beat milk, butter and egg in large bowl with hand beater or wire whisk.
  • Stir in remaining ingredients all at once just until flour is moistened (batter will be lumpy).
  • Pour into pan.
  • Bake 20 to 25 minutes or until golden brown and toothpick inserted in center comes out clean.
  • Serve warm if desired.

St. Patrick's Day is right around the corner, and what better way to celebrate than with a loaf or two of Irish soda bread? If made correctly, this is one of the best quick breads (those leavened without yeast) you'll ever have. Subtly sweet, with a light, tender crumb, and not at all dry. You can use quick-cooking oats in place of rolled oats, if desired.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper or silicone baking mat.
  • Whisk all-purpose flour, whole wheat flour, oats, baking soda, baking powder, and salt together in a bowl. Cut butter into flour mixture using a pastry blender until mixture resembles coarse meal.
  • Beat buttermilk, egg, honey, and orange zest together in a bowl. Pour buttermilk mixture, currants, and raisins into flour mixture; stir with a wooden spoon until a wet, sticky dough comes together.
  • Turn dough out onto a well-floured work surface; press dough together into a soft ball of dough and cut into 2 pieces. Form each half into a smooth, round loaf. Transfer to prepared baking sheet and let rest for 15 minutes. Cut a 1/2-inch deep "X" into the top of each loaf with a serrated knife.
  • Bake in the preheated oven until golden brown and fragrant, about 45 minutes. Transfer loaves to a wire rack to cool completely before slicing.

  • Remove odd pots and pans from oven.
  • Preheat oven to 350º / 180º.
  • Cream together butter and sugar.
