ALIñO PREPARADO/ SEASONING OR RUB

I first started using this in Venezuela and when we moved back to the U.S. I wanted to make my own as I did not expect to find it here. I use it in my Arroz con Pollo( Rice with Chicken), which is a Peruvian dish and it really enhances the flavors.

Aliño Preparado/ Seasoning or Rub image

Steps:

  • Place all ingredients in a mortar and grind to a fine powder with the pestle. Use at your own discretion.

3 tablespoon(s) ground coriander seeds
1 tablespoon(s) oregano, dried, ground
1 tablespoon(s) thyme, dried, ground
1 tablespoon(s) salt
2 tablespoon(s) paprika, sweet mild
2 tablespoon(s) white pepper
1 teaspoon(s) cumin seeds
1 teaspoon(s) achiote/annatto if available

JUICY AND SPICY MARINADE (POLLO AND CARNE ASADA)

Good marinade for beef or chicken. After marinating, use the sauce to cook meat in or to baste grilled meat.
