ALL-IN-ONE SPAGHETTI

This is an easy, one-pot spaghetti that goes great with a salad and garlic bread. I got this recipe out of Southern Living Magazine, November 1998. Our family loves this recipe because there is plenty of sauce. Also, when you add the uncooked spaghetti noodles to the pot and cook, all the flavors really meld together. It is delicous!

Steps:

  • Cook first 3 ingredients on the stove, stirring until beef crumbles and is no longer pink.
  • Drain well.
  • Stir in tomato sauce and next 8 ingredients.
  • Bring to a boil.
  • Cover, reduce heat, and simmer, stirring often, 30 minutes.
  • Add uncooked pasta, cover and simmer another 20-30 minutes (or longer, if desired).
  • Serve with Parmesan cheese.

1 lb ground beef
1 large onion, chopped
2 garlic cloves, minced
1 (8 ounce) can tomato sauce
1 (6 ounce) can tomato paste
3 cups tomato juice
1 cup water
1 teaspoon salt
2 -3 teaspoons chili powder
1 teaspoon dried oregano
1 dash pepper
1 (7 ounce) package spaghetti, uncooked
grated parmesan cheese

ONE-POT SPAGHETTI WITH FRESH TOMATO SAUCE

This one-pot meal is perfect for the beginner cook: Everything but the cheese goes into one skillet, and it all magically comes together. The tomato paste is here for a little flavor insurance, just in case your tomatoes aren't at their best. Feel free to add an extra tablespoon when they're out of season.

One-Pot Spaghetti with Fresh Tomato Sauce image

Steps:

  • Put the spaghetti, oil, tomato paste, garlic, tomatoes, basil, crushed red pepper and 1 teaspoon salt in a high-sided medium skillet. Add 5 cups water, and bring to a boil over medium-high heat. Continue to cook, stirring the spaghetti frequently to keep it from clumping, until it is al dente and the sauce has reduced and thickened, 6 to 8 minutes.
  • Stir in the Parmesan (the sauce will thicken more), and season with salt if needed. Divide the spaghetti among 4 bowls, and garnish with more Parmesan and torn basil leaves.

  • Combine pasta, tomatoes, onion, garlic, red-pepper flakes, basil, oil, 2 teaspoons salt, 1/4 teaspoon pepper, and water in a large straight-sided skillet. Bring to a boil over high heat. Boil mixture, stirring and turning pasta frequently with tongs, until pasta is al dente and water has nearly evaporated, about 9 minutes.
  • Season to taste with salt and pepper, divide among 4 bowls, and garnish with basil. Serve with oil and Parmesan.

12 ounces linguine
12 ounces cherry or grape tomatoes, halved or quartered if large

  • Combine ground sausage, onions, and garlic in a large pot or skillet with tall sides. Cook over medium heat until sausage is cooked through, 5 to 8 minutes. Drain and discard grease.
  • Stir water, pasta sauce, and Italian seasoning into the pot; bring to a boil. Stir in spaghetti noodles, return to a boil and cook, stirring occasionally, until noodles are cooked through and sauce has thickened, 17 to 20 minutes.

  • Cook pasta as directed on package.
  • Meanwhile, heat oil in large ovenproof skillet on medium-high heat. Add onions and mushrooms; cook and stir 5 minute or until onions are crisp-tender. Add zucchini and tomatoes with their liquid. Cook 10 minute or until most of the liquid has evaporated, stirring occasionally.
