ALMOND TAHINI DATE BALLS

Very Middle Eastern and very tasty. A somewhat sophisticated brunch treat if you will, and would also make awesome finger food for tea or a dinner party. Especially if it's one of those where the meal is light but hors d'oeuvres are heavy. And can you believe this awesome treat is healthy and vegan? I couldn't! For some ideas, try a mix of Chinese red dates (I used 100%) with traditional dates. Put in a dash of ground pistachio and/or cardamom, how about a teensy bit of honey? There's a lot more I plan on doing with that huge thing of almonds I bought at BJ's. Found on the internet somewhere, don't remember where. Almond Tahini Date Balls image

Steps:

  • Grind almonds and cinnamon in food processor until finely chopped.
  • Add tahini and continue to pulse.
  • Add dates and chop until all blended in (be careful with pits!).
  • Form into 1" balls and refrigerate.
  • Can be eaten chilled or at room temperature, and they also travel well so they make a good brown-bag dessert.

2 cups sliced almonds (I just used whole almonds)
1 teaspoon cinnamon
2 teaspoons tahini
18 medium dried dates (They MUST be pitless. I use pitless Chinese red dates, which are small, so I used about 25)

Honey Almond Date Balls image

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Grind the almonds in a food processor until finely chopped. Move chopped almonds to a baking sheet and toast in the oven for 5 to 7 minutes, until fragrant and just a shade darker.
  • Coarsely chop dates and add to food processor. Pulse until finely chopped and dates form a ball. Remove from processor to a bowl.
  • Add half of the ground almonds to the dates, leaving the reserved almonds on the baking pan to roll the balls in once formed.
  • Add the honey to the date and almond mixture. Mix together until evenly mixed and smooth.
  • Coat your hands with some vegetable oil so mixture does not stick too much.
  • Form mixture into 1-1/2" balls. Roll each ball in ground almonds to coat well. Place in a sealed container until ready to eat.
  • Any leftover chopped nuts for coating can be sprinkled over the balls to keep them from sticking together when moving.
  • Will keep for up to 5 days at room temperature or up to a week in refrigerator.

Steps:

  • Set oven to 300 degrees.
  • Butter a large baking sheet.
  • In a large bowl using an electric mixer on medium speed beat butter with 1/2 cup powdered sugar and almond extract until smooth (about 3 minutes).
  • In a medium bowl mix the flour with baking powder; add to the creamed mixture; beat until blended.
  • Stir in chopped almonds.
  • Shape into 1-inch balls and place about 1-inch apart on the buttered baking sheet.
  • Bake about 20-25 minutes or until pale golden brown (do not overbake!).
  • Let the cookies stand on sheet until cool enough to handle.
  • Place about 1-1/2 cups powdered sugar in a shallow dish.
  • Roll the warm cookies in powdered sugar evenly to coat all over.
  • Set the cookies on racks to cool completely.

Steps:

  • Line two cookie sheets or large flat surface with waxed paper and place large cooling rack on top. Place coconut in large bowl. Heat corn syrup, one minute in microwave, until syrup boils. Pour immediately over coconut and stir until well mixed.
  • Using a tablespoon measure, shape coconut into 26 balls with hands and place on wire racks. Let rest 10 minutes, then re-roll each ball to keep loose ends from sticking out.
  • Melt shortening and chocolate together in large glass bowl in microwave, or in saucepan on stovetop, stirring once or twice. Working quickly, spoon 1 tablespoon of chocolate over each ball. Lightly press an almond on top of each ball. Let balls stand until set.

Steps:

  • Heat oven to 325°F.
  • Spread nuts on baking sheet and toast in the oven until golden brown, 8 to 10 minutes.
  • Cool and chop.
  • With an electric mixer set at medium low speed, beat butter, sugar, salt and almond extract until creamy.
  • On low speed, beat in flour until mixture just comes together.
  • Stir in nuts.
  • Chill until firm.
  • Roll into approximately 1-inch balls.
  • Put on ungreased baking sheets.
  • Bake until golden brown on bottom, 15 to 18 minutes.
  • Cool completely on wire racks.
