AMARANTH LEAVES SPINACH IN COCONUT MILK

Amaranth leaf is cooked in many cultures around the world. It is a flavoursome and nutritious green. Of course any other leafy green could be substituted. Serve with rice or grain of your choice.

Amaranth Leaves Spinach in Coconut Milk image

Steps:

  • Bring water and salt to the boil in a large pot.
  • Add washed amaranth leaves and boil for 15 minutes or until tender.
  • In a separate pan, heat the oil and cook the chopped onion until golden brown.
  • Add the chopped tomatoes and cook until soft.
  • Add the well drained amaranth leaves and stir to combine.
  • Add the coconut milk and continue cooking for about 10 minutes.
  • Adjust seasoning or add lemon juice to taste.

Salmon Cooked in Coconut Milk image

Steps:

  • Put the fish steaks in a fairly shallow ovenproof dish with a lid, into which they fit quite closely.
  • Scatter the ginger, garlic, tomato, chili and yellow pepper over and around the fish and the cardamom pods in between.
  • Empty the coconut milk into a separate bowl, add a good sprinkling of sea salt and gradually stir in the lime juice. Pour the mixture gently over and around the fish and cover the dish.
  • Preheat the oven to 150C/300F/Gas 2. Put the dish on the center shelf and cook for 40-50 minutes, until the fish is lightly done. To discover this insert a small, sharp knife into the center of one of the steaks - if the flesh is slightly darker pink in the center it will be perfectly cooked. Remove from the oven.
  • Before serving scatter the mint leaves on top.

2 1/2 cm piece gingerroot, peeled and cut into small, very thin slices
2 large garlic cloves, peeled and cut into small, very thin slices
350 g tomatoes, peeled and halved
1 fresh red chile, de-seeded and sliced as finely as possible
1 small yellow pepper, de-seeded and thinly sliced
4 -6 cardamom pods, roughly crushed
400 ml tinned coconut milk
sea salt
2 limes, juice of, only
fresh mint leaves, chopped

Steps:

  • In a medium saucepan, bring to a boil 2 cups water. Add the 1 cup amaranth, stirring well. Cover pan and lower the heat, allowing to simmer for 20 minutes.
  • When amaranth is cooked, remove from burner, season with sea salt and freshly ground pepper. Set aside.
  • For the masala: In a small fry pan, add 1 tablespoon oil, sauté garlic and onion until soft.
  • Add the chopped red bell pepper and zucchini, stir-fry for 2-3 minutes.
  • Add the lemon zest, garam masala powder, coriander powder, chili powder and stir fry. Add the amchoor and black pepper. Remove from heat and set aside to cool a few minutes.
  • With a spatula fold mixture into the prepared amaranth. Allow to cool until easily handled.
  • Once cooled, form into small patties.
  • Coat each patty, front and back, with amaranth flour (dry amaranth can be ground fine in a spice grinder to make amaranth flour) or breadcrumbs.
  • Heat 2 tablespoon oil in a frying pan. Fry patties until golden, adding oil if needed.
  • 1/20/2018 Update: Made it and feel there recipe needs work. Amaranth's texture is unusual and the tikkis came out to wet.

1/4 tablespoon chili powder
1 pinch amchoor powder (mango powder)
1 tablespoon garam masala
1/2 teaspoon ground coriander
1/2 teaspoon lemon zest
fresh ground black pepper
2 tablespoons oil, to pan fry
amaranth flour or breadcrumbs, for dusting
2 tablespoons vegetable oil
