- Mix heavy cream, half-and-half, and sugar in a large bowl until sugar is dissolved. Add amaretto liqueur and vanilla extract.
- Pour milk mixture into an ice cream maker and freeze according to the manufacturer's instructions until ice cream reaches 'soft-serve' consistency. Transfer ice cream to a lidded container. Freeze for about 2 hours before serving.

BERRIES WITH ALMOND CREAM AND AMARETTI

- In a medium bowl add the berries and douse with the liqueur. Sprinkle with 1 tablespoon of sugar and let the berries macerate to get their juices flowing.
- In a large bowl, add the cream, 2 tablespoons of the remaining sugar and almond extract. Beat the cream with a whisk or electric beater until the cream forms peaks.
- Serve the berries in dessert dishes topped with whipped cream and crushed amaretti cookies.

- Combine the strawberries with the amaretto in a serving container and stir together. Crush about 1/4 cup of the strawberries with a fork, and mix again.

- Wash, dry , and hull strawberries.
- In a small bowl mix together sugar, vanilla, and ground almonds.
- In a separate bowl, beat egg whites until frothy.
- Dip strawberries in egg white, then roll in almond mixture to coat.
- Place strawberries on a plate, cover and freeze for 15-20 minutes (Do not freeze longer than 20 minutes).
- Remove from freezer, and let thaw about 20 minutes while you prepare the sauce.
- Whisk egg yolks, grated lemon peel, and sugar together in top of a double boiler over simmering water.
- Add amaretto gradually to egg yolk mixture.
- Whisk until sauce is foamy. Remove from heat.
- Spoon sauce into 6 individual bowls.
- Divide thawed strawberries among bowls.
- Garnish with a few strawberry leaves and serve.

FROZEN AMARETTO CREAM BASKETS WITH BERRIES
Steps:
- Line baking pan with foil. Using electric mixer, beat cream cheese in medium bowl until smooth. Beat in 1/2 cup sugar, then amaretto. Using same beaters, beat cream in large bowl until peaks form. Fold cream into cheese mixture in 2 additions. Drop cheese mixture in 6 mounds into prepared pan. Using back of spoon, make depression in center of each mound, pressing to form 3- to 4-inch-diameter baskets. Freeze baskets until firm, about 2 hours, or cover and keep frozen up to 3 days.
- Combine strawberries, blueberries, raspberries, and remaining 1/4 cup sugar in medium bowl. Toss to blend. Let stand to release juices, tossing occasionally, about 30 minutes.
- Place 1 basket on each of 6 plates. Spoon berries and juices into each.

- Put them in a blender with the ice cream, milk, powdered sugar and amaretto.
- Blend until smooth. Taste and add more amaretto if desired- I like a hint of amaretto but you may prefer it stronger.

- Place almonds in a food processor; cover and pulse until almonds are finely ground. Add flour, confectioners' sugar and salt; pulse until blended. - Heat oven to 350°F (325°F for dark or nonstick pans). Grease and lightly flour two 8- or 9-inch round cake pans. Place almonds in food processor or blender. Cover; process until almonds are finely ground.

- For syrup: In a small saucepan, stir together the sugar, water and honey. Bring the mixture to a boil. Reduce the heat and simmer, uncovered, for 5 minutes. Set the mixture aside to cool.

- Put the amaretto, lemon juice, egg white and 4 tsp of the cherry syrup into a blender (you can also do this in a large cocktail shaker, you will just need to shake it very hard without adding any ice). Whizz up the mixture a few times at a high speed until it is pale and starting to increase in volume. If your blender is suitable for use with ice, add a few handfuls and pulse just twice more to chill the mixture. Alternatively, just stir in the ice until the outside of the jug feels cold. Pour into glasses and garnish with cherries to serve.

- Combine amaretto, lemon juice, orange juice, and simple syrup in jar. Secure lid and shake to combine. Freeze until ice-cold but not solid, at least 2 hours and up to 5 hours.
- Transfer cocktail to a blender and add 2 cups ice. Purée on high speed until thick and smooth. (On a hot day, you may need to blend in a few more ice cubes to thicken, but keep in mind that the more you add, the more diluted the drink will be.)
- Divide cocktail between 2 chilled rocks glasses. Gradually pour ¼ oz. Fernet-Branca over the back of a spoon into each drink if desired. Garnish each with a brandied cherry and paper umbrella.
