MOST AMAZING CHALLAH

I made up my own Challah that is amazing! I have tried countless combinations to finally get it right. It uses quick rise yeast to save you a bunch of time. Enjoy!

Steps:

  • Sprinkle the yeast over the water in a large bowl, and stir gently to moisten the yeast. Stir in salt, sugar, margarine, and 4 eggs, and beat well. Gradually mix in the flour, 1 cup at a time, up to 12 cups, until the dough becomes slightly tacky but not wet. Turn the dough out onto a floured surface, and knead until smooth and elastic, 8 to 10 minutes.
  • Grease baking sheets, or line them with parchment paper and set aside.
  • Cut the bread dough into 4 equal-sized pieces (or 2 pieces to make 2 large loaves). Cut each piece into thirds for 3-strand braided loaves. Working on a floured surface, roll the small dough pieces into ropes about the thickness of your thumb and about 12 inches long. Ropes should be fatter in the middle and thinner at the ends. Pinch 3 ropes together at the top and braid them. Starting with the strand to the right, move it to the left over the middle strand (that strand becomes the new middle strand.) Take the strand farthest to the left, and move it over the new middle strand. Continue braiding, alternating sides each time, until the loaf is braided, and pinch the ends together and fold them underneath for a neat look. Repeat for the remaining loaves.
  • Place the loaves onto the prepared baking sheets, and let rise until double in size, 1 to 1 1/2 hours.
  • Preheat an oven to 350 degrees F (175 degrees C). Whisk 1 egg with vanilla extract in a small bowl, and brush the loaves with the egg wash. Sprinkle each loaf with about 1 tablespoon of sesame seeds.
  • Bake in the preheated oven until the tops are shiny and golden brown, about 30 minutes. Let cool before slicing.

Amazing Fast Rise Challah Bread - One Small Loaf image

Steps:

  • Mix warm water, oil and egg together into a stand mixer bowl. Mix, with kneading hook, until blended.
  • Add salt, sugar, and yeast and flour ( small amount at a time). Mix with hook until a soft dough is formed. You may need to add a bit more warm water ( or more flour if needed). Check the dough, it should be soft and slightly sticky. It should easily form into a smooth ball. When the right consistency is reached, knead with hook for 6 minutes.
  • Take dough ball out and place into oiled bowl-turn it over so that the oil in on all sides. Cover with saran wrap and let rise until doubled ( about 30 minutes or more).
  • Punch down dough and divide into thirds. Roll each piece into a strand . Prepare cookie sheet with parchment paper. Place all three strands onto sheet and braid. Cover with saran wrap and let rise again until doubled ( about 30 minutes or more). In the mean time preheat oven to 375°F.
  • Brush top of braid with beaten egg yolk and bake for 15-20 minutes or until golden brown.

Steps:

  • Combine water and sugar in a small bowl. Sprinkle the yeast over the top. Set aside until foamy, about 8 minutes.
  • Put 1 cup of the flour in a large bowl and make a well in the center. Whisk honey with 1 of the whole eggs, the yolks, olive oil, and salt in a small bowl and pour into the well. Stir to combine. Add yeast mixture, remaining 3 cups flour, and currants and stir to make a soft, shaggy dough. Knead dough on a lightly floured surface until soft and supple, about 10 minutes.
  • Shape dough into a ball and place in lightly oiled large bowl. Cover with a clean kitchen towel and let rise until doubled in size, about 1 hour. Turn dough onto a lightly floured surface; knead for just a minute, shape into a ball and return to bowl. Cover and let rise again until doubled in size, about 1 hour.
  • Line a baking sheet with parchment paper. Form loaf according to the following instructions: Turn dough onto a clean work surface and divide into 3 equal pieces. Roll and stretch each piece into a rope 12 to 15 inches long. Arrange ropes side by side on the work surface. Starting at the far end, braid the ropes. When the braid is finished, tuck both ends under and pinch to seal. Place loaf on prepared baking sheet.
  • Cover with a clean, dry kitchen towel and set aside to rise until doubled, about 1 hour.
  • Place a rack in the center of the oven and preheat to 375 degrees F. Beat remaining egg. Brush loaf with egg and sprinkle with poppy seeds. Bake until golden brown, about 35 minutes.

Steps:

  • Add yeast to lukewarm water and dissolve.
  • Add remaining ingredients.
  • Turn out on lightly floured board and knead until smooth and elastic.
  • Round up and place in a greased bowl.
  • Grease surface of dough.
  • Cover and let rise until double in bulk.
  • Punch down dough and turn out on floured board.
  • Round up dough and let rest 10 minutes.
  • Mold dough into a loaf.
  • Let rise in a greased pan until double in bulk.
  • Bake in 425°F oven about 40 minutes.
  • Turn out of pan and brush top with melted butter.
  • Cool on a rack.

Steps:

  • In a medium bowl, blend together warm water, melted margarine, sugar, and 3 beaten eggs
  • In a large bowl, mix together yeast, salt, and 7 cups of the flour. Gradually stir in liquid ingredients, and mix until dough holds together.
  • Knead dough on a floured surface with remaining flour until smooth.
  • Split the dough into 2 large pieces. Split the 2 large pieces into 3 pieces each. Roll each third into a rope 3/4 inch thick and braid 3 strands together. Repeat. Place shaped dough onto greased cookie sheets. Brush dough with remaining beaten egg. Add poppy or sesame seeds, if desired. Let rise in a warm place until doubled in size.
  • Bake in a preheated 325 degree F(165 degrees C) oven for 20 to 30 minutes.
