COCONUT MACAROONS

Coconut Macaroons image

Steps:

  • Preheat the oven to 325 degrees F. Combine the coconut, condensed milk, and vanilla in a large bowl. Whip the egg whites and salt on high speed in the bowl of an electric mixer fitted with the whisk attachment until they make medium-firm peaks. Carefully fold the egg whites into the coconut mixture. Drop the batter onto sheet pans lined with parchment paper using either a 1 3/4-inch diameter ice cream scoop, or 2 teaspoons. Bake for 25 to 30 minutes, until golden brown. Cool and serve.

14 ounces sweetened shredded coconut
14 ounces sweetened condensed milk
1 teaspoon pure vanilla extract
2 extra-large egg whites, at room temperature
1/4 teaspoon kosher salt

Steps:

  • Place the cream and sugar into the bowl of a stand mixer with the whisk attachment and whip until stiff peaks are formed. Add the sour cream and whisk to combine. Add the marshmallows, orange, pineapple, coconut, pecans and cherries and stir to combine. Transfer to a glass serving bowl, cover and place in the refrigerator for 2 hours before serving.

1/2 cup heavy cream
1 tablespoon sugar
4 ounces sour cream
6 ounces homemade mini marshmallows, approximately 3 cups
1 cup clementine orange segments, approximately 6 clementines
1 cup chopped fresh pineapple
1 cup freshly grated coconut
1 cup toasted, chopped pecans
1/2 cup drained maraschino cherries

Steps:

  • In a small bowl, combine the coconut, sugar, flour and salt. Add egg whites and vanilla; mix well., Drop by rounded teaspoonfuls onto greased baking sheets. Bake at 325° for 18-20 minutes or until golden brown. Cool on a wire rack.

  • In the bowl of a stand mixer or large bowl, beat butter, cream cheese, and sugar until light and fluffy, about 3 minutes. Add egg yolk, lemon zest, lemon juice, and beat to incorporate.
  • In a small bowl, whisk together flour, baking powder, and salt. With the mixer set on low, gradually add to the butter mixture. Beat for 1 minute. Stir in pineapple and 3 cups of coconut. Cover bowl with plastic wrap and chill for 1 hour.
  • Heat oven to 350 degrees. Line 2 baking sheets with parchment and set aside. Scoop out dough and shape into 1 to 1 1/4 inch balls. Place the remaining 2 cups of coconut in a shallow bowl and roll the dough in the coconut. Place dough on prepared baking sheets.
  • Working in batches, bake in the oven for 13-15 minutes until the edges of the cookies are golden brown. Remove from the oven and press a cherry half into the center of each cookie. Let cool for 1 minute then remove to a wire rack to cool completely. Serve or store in an airtight container for up to 3 days.

  • Beat butter, cream cheese, and sugar with a stand mixer fitted with a paddle attachment on medium speed until blended, about 3 minutes. Add egg yolk, orange zest, and juice; beat on low speed until blended, about 1 minute.
  • Whisk together flour, baking powder, and salt in a bowl until combined; gradually add to butter mixture, beating on low speed until blended, about 1 minute. Stir in pineapple and 3 cups of the coconut. Cover; chill 1 hour.
  • Preheat oven to 350°F. Shape dough into 1-inch balls. Place remaining 2 cups coconut in a bowl; roll balls in coconut, and arrange on 2 baking sheets lined with parchment paper.
  • Working in 2 batches, bake macaroons in preheated oven until lightly browned, 12 to 14 minutes. Remove from oven; immediately press 1 cherry half into center of each warm macaroon. Cool on baking sheets 1 minute. Transfer macaroons to wire racks; cool completely, about 30 minutes. Store in an airtight container up to 3 days.
