- Preheat oven to 350 degrees F (175 degrees C).
- Place the chicken pieces in a 4 quart casserole dish. Mix the soup mix, dressing and jam together, and pour over the chicken.
- Cover dish and bake for 1 hour in preheated oven.

Steps:
- In a large bowl, mix together the apricot preserves, onion soup mix, and Russian dressing. Arrange the chicken breasts in a large 9 x 13 inch casserole. Pour the sauce over the chicken . Bake covered with foil in a preheated 350 degree oven for 45 minutes. Uncover and bake another 15 to 20 minutes.

AMY'S MOTHER'S APRICOT CHICKEN
Amy said this is simple to make and I didn't want to lose the recipe. Her kids like it too. You will only need a dollop of semi frozen orange juice concentrate on each chicken breast so use a small container.

Steps:
- Place onion slices in the bottom of a roasting pan.
- Place the chicken pieces on top of the onions and sprinkle with garlic, salt and pepper to taste.
- Spoon the semi-thawed orange juice concentrate over the chicken pieces and then place a heaping tablespoons of apricot preserves on top to that too.
- Bake in a 350 degree F. oven for an hour or until chicken is cooked through.
