Steps:

  • Soak raisins in a bowl of warm water until plump, about 30 minutes. Drain and pat raisins dry with a towel.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat butter and both sugars with an electric mixer in a large bowl until smooth. Beat the first egg into the butter until completely blended; beat vanilla extract in with the second egg.
  • Combine oats, flour, walnuts, coconut, five-spice powder, baking powder, cinnamon, and salt in a large bowl. Stir egg mixture into oat mixture until well mixed. Fold in raisins and mix until just incorporated.
  • Drop rounded spoonfuls of dough 2 inches apart onto ungreased baking sheets.
  • Bake in preheated oven until golden brown, 12 to 15 minutes.

Steps:

  • HEAT oven to 350 degrees F. Coat baking sheets lightly with no-stick cooking spray.
  • COMBINE shortening, brown sugar, egg, milk and vanilla in bowl of electric mixer; beat at medium speed until well blended.
  • COMBINE oats, flour, baking soda, salt and cinnamon. Mix into shortening mixture at low speed just until blended. Stir in raisins and walnuts. Drop by rounded measuring tablespoonfuls of dough 2 inches apart onto prepared baking sheets.
  • BAKE 8 to 10 minutes or until lightly browned. Cool 2 minutes on baking sheets. Place on cooling racks to cool completely.

  • In a large bowl, combine sugar, brown sugar and butter, beat until light and fluffy.
  • Add vanilla and egg, blend well.

Super Yummy Chocolate Chunk Oatmeal Cookies image

Steps:

  • Preheat the oven to 350 degrees F.
  • In a small mixing bowl, combine the flour, oats, baking powder, cinnamon and kosher salt.
  • In large mixing bowl or the bowl of a stand mixer, combine the brown sugar, granulated sugar and butter. Using an electric beater or the paddle attachment of the stand mixer, beat together the butter and sugar until it they are light and fluffy. Add the eggs one at a time and beat them into the butter and sugar mixture. Add in the vanilla as well.
  • With a rubber spatula or with the stand mixer on low, gradually add the flour mixture into the butter/sugar mixture. Mix until just combined. Fold in the chocolate chunks and walnuts.
  • Spoon the cookie dough by 2 tablespoon-size balls onto an ungreased cookie sheet. Place the cookie dough balls 2 inches apart on the cookie sheet. Place the cookie sheet in the oven and bake for 12 to 13 minutes.
  • When the cookies come out of the oven IMMEDIATELY sprinkle each cookie with a few grains of sea salt. This is really important to do while the cookies are hot.
  • Let the cookies cool for 2 to 3 minutes and then transfer them to a cooling rack.

Steps:

  • With a Kitchenaid mixer: beat eggs 20 minutes with 2 cups of granulated sugar (yes I mean 20 minutes as this is what will make the cookies light as a feather with a crisp melt in you mouth top crust).
  • Add flour gradually, beating well after each addition. Add 1 tsp anise oil and blend well.
  • Drop by tablespoonsful onto greased cookie sheets and let stand in a draft free place overnight.
  • Bake in a 375°F oven for 10 minutes until light golden but do not brown.
  • Cool on baking racks thoroughly before storing.
  • Store in a tightly covered cookie tin (not plastic).
  • The longer you let the cookie age, the better it will be.

Auntie Anne's Pretzels Copycat image

Steps:

  • Sprinkle yeast on lukewarm water in mixing bowl; stir to dissolve. Add sugar, salt and stir to dissolve; add flour and knead dough until smooth and elastic. Let rise at least 1/2 hour.
  • While dough is rising, prepare a baking soda water bath with 2 cups warm water and 2 tbsp baking soda. Be certain to stir often.
  • After dough has risen, pinch off bits of dough and roll into a long rope (about 1/2 inch or less thick) and shape. Dip pretzel in soda solution and place on greased baking sheet. Allow pretzel to rise again. Bake in a 450 degree oven for about 10 minutes or until golden. Brush with melted butter and enjoy.
  • Toppings:
  • After you brush with butter try sprinkling with coarse salt.Or for Auntie Anne's famous Cinnamon Sugar, try melting a stick of butter in a shallow bowl (big enough to fit the entire pretzel) and in another bowl, make a mixture of cinnamon and sugar. Dip the pretzel into the butter, coating both sides generously. Then dip again into the cinnamon mixture.
