APPALACHIAN CHILI

I specialize in preparing Appalachian dishes, which, simply put, utilize common ingredients and produces a lot of flavor and feeds many people on a small budget. This chili tastes great, is easy to prepare and can also be served over spaghetti if desired. This is what you would call "Grandma's chili."

Appalachian Chili image

Steps:

  • In a large cooking pot, pour in the beef and chicken broth and crumble in the burger.
  • Bring to a boil over medium heat.
  • Add all other ingedients, except for the beans and the spaghetti, stirring after adding each one.
  • Once the chili begins to boil, reduce the heat so that it will boil slowly with the lid on.
  • Allow the chili to slowly boil for 90 minutes, stirring occasionally.
  • Add the beans after 90 minutes and allow the chili to continue the slow boil for another 30 minutes.
  • If desired, Prepare the spaghetti separately, boiling in water per package directions, and set aside, covered.
  • Serve either in medium-sized bowls with saltines or oyster crackers available at the table or, portion out the chili over the spaghetti on large plates.

1 1/2 lbs ground chuck
8 ounces commercial salsa
1 (12 ounce) bottle chili sauce
2 (15 ounce) cans diced tomatoes with juice
1 (8 ounce) can tomato sauce
1 (15 ounce) can beef broth
1 (15 ounce) can chicken broth
3 large carrots, cut into nickles
2 large white onions, chopped
1 green bell pepper, chopped
1/2 chipotle pepper (canned in sauce - do not rinse sauce off the pepper)
2 tablespoons frank red hot sauce
1 teaspoon garlic salt
3 tablespoons chili powder
2 teaspoons ground cumin
2 teaspoons dried oregano
1 tablespoon sorghum molasses
2 (15 ounce) cans dark red kidney beans, drained and rinsed
1 (15 ounce) can chili beans, in sauce
1 lb dried spaghetti (optional)

ARIZONA ROADHOUSE CHILI

The best thick hearty chili recipe you'll ever need. In 25 years of restaurant cooking, this is my classic chili recipe; loved by thousands. Vary the amount of green chilies and hot sauce if you're an Easterner unused to fiery Western foods, but don't change anything else.

Arizona Roadhouse Chili image

Steps:

  • Place pinto beans in a large container and cover with several inches of cool water; let stand 8 hours to overnight.
  • Cook and stir beef in a large stockpot over medium-high heat until crumbly, evenly browned, and no longer pink, 7 to 10 minutes. Drain and discard grease from pot.
  • Drain pinto beans and add to stockpot; add onions, celery, carrots, garlic, red bell peppers, jalapeno peppers, Anaheim peppers, poblano peppers, diced tomatoes, guajillo chile powder, cumin, oregano, coriander, cinnamon, and hot pepper sauce. Reduce heat to medium-low and cook mixture at a simmer for about 3 hours.
  • Stir beef granules into the chili and continue simmering until beans are very tender and disintegrate easily, 1 to 3 hours more, adding water as needed to keep beans and vegetables immersed in liquid. Thicken the chili with masa harina if you prefer a thicker texture. Season with salt just before serving.

1 pound 90%-lean ground beef
2 large sweet onions, diced
3 cups diced celery
3 carrots, peeled and diced
6 cloves garlic, minced
2 red bell peppers, diced
4 jalapeno peppers, seeded and minced
2 Anaheim peppers, seeded and diced
2 poblano peppers, seeded and diced
1 quart diced tomatoes
2 tablespoons guajillo chile powder
1 ½ tablespoons ground cumin
1 teaspoon dried oregano
1 teaspoon ground coriander
¼ teaspoon ground cinnamon
2 tablespoons hot pepper sauce
1 tablespoon beef bouillon granules
water, as needed
2 teaspoons masa harina flour (Mexican corn masa mix)
2 teaspoons salt

AUSH (AFGHANI CHILI)

This is a delicious and exotic alternative to American-style chili. It's not too spicy, but combines intriguing flavors. I adapted this recipe from a traditional Afghani family favorite. It may be cooked in a slow cooker, Dutch oven, or soup pot. Try it also with ground lamb or ground turkey.

Aush (Afghani Chili) image

Steps:

  • Brown ground beef in a skillet over medium heat; remove with slotted spoon to a large pot; reserving drippings in the skillet. Cook and stir the onion in the reserved drippings until golden brown; remove with slotted spoon and add to beef in the pot. Stir the tomatoes with juice, garlic, red pepper, cumin, chili powder, mint, garam masala, garbanzo beans, and spinach into the beef mixture and place the pot over low heat; simmer 3 to 6 hours.
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the fettuccini, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink. Stir into the chili along with the sour cream and serve hot.
