APPETIZER ESSENTIALS: MOZZARELLA CHICKEN BITES

These are very easy to throw together, and are great as an appetizer for your next dinner party. Easy/peasy to make, and taste great. What could go wrong? So, you ready... Let's get into the kitchen.

Appetizer Essentials: Mozzarella Chicken Bites image

Steps:

  • PREP/PREPARE
  • Gather your ingredients.
  • Place a rack in the middle position, and preheat the oven to 375f (190c).
  • Mix the chicken, onion powder, hot sauce, colby cheese, and mayonnaise in a small bowl.
  • Season with a bit of salt and pepper, to taste.
  • Cut the pizza dough into rounds, about 2-inches in diameter.
  • Add the pastry rounds to a mini cupcake pan.
  • Add to the oven and precook for 5 minutes.
  • Remove from oven, allow to slightly cool, and then fill with a heaping teaspoon of the chicken.
  • Top with some mozzarella.
  • Return to the oven, increase the temperature to 400f (205c), and bake until the cheese is melted and bubbly, about 6 - 8 minutes.
  • PLATE/PRESENT
  • Serve on a platter while still warm, and watch them disappear. Enjoy.
  • Keep the faith, and keep cooking.

PLAN/PURCHASE
1 large chicken breast, cooked in butter, and chopped, about 1.5 cups
1 tablespoon(s) fresh dill, chopped
1/2 teaspoon(s) onion powder
1 tablespoon(s) hot sauce, i prefer frank's
2 ounce(s) colby cheese, freshly shredded
3 ounce(s) mayonnaise, plain variety
- salt, kosher variety, to taste
- black pepper, freshly ground, to taste
1 - recipe for pizza crust, your favorite, rolled out and cut into 2-inch rounds
4 ounce(s) mozzarella, freshly shredded

I had two goals for today... One was to finish up a painting I've been working on, and another was to come up with an appetizer for a casual Saturday afternoon party I'm hosting tomorrow. This is the appetizer... the painting is still a work in progress. So, you ready... Let's get into the kitchen.

Appetizer Essentials: Spicy Chicken Waffle Bites image

Steps:

  • 1. PREP/PREPARE
  • 2. Gather your Ingredients (mise en place).
  • 3. Mix the honey, cayenne and paprika together in a small bowl, and reserve.
  • 4. Chef's Note: The interplay between the honey, the paprika, and the cayenne, create some really interesting flavor notes for your palette.
  • 5. Mix all the ingredients for the batter in a large bowl.
  • 6. Chef's Tip: The batter should be nice and thick; almost like a tempura batter.
  • 7. Add the chicken bites into the batter.
  • 8. Add some oil (about 1in/2.5cm) to a pan, or pot, and heat up to 350f (175c).
  • 9. Shake off the excess and add the chicken in small batches into the hot oil.
  • 10. Fry until the chicken is cooked through and golden brown, about 3 - 5 minutes.
  • 11. Drain on paper towels, and finish cooking the remaining chicken bites.
  • 12. Toast the mini waffles until golden brown.
  • 13. PLATE/PRESENT
  • 14. Place the chicken bites, on the toasted mini waffles, drizzle with the honey/paprika/cayenne mixture, and serve while nice and warm. Enjoy.
  • 15. Keep the faith, and keep cooking.

PLAN/PURCHASE
1/4 c fresh clover honey
1/2 tsp hungarian paprika
1 pinch cayenne pepper
1 large chicken breast, cut into bite-sized pieces
10 small mini waffles, plain variety
THE BATTER
1 1/2 c fresh buttermilk
1 1/2 c flour, all-purpose variety
1 tsp black pepper, freshly ground, or to taste
1 tsp chili powder, or to taste
1 tsp cajun spice, or to taste i prefer tony chacheres
1/2 tsp salt, kosher variety
1/2 tsp onion powder or to taste
ADDITIONAL ITEMS
peanut oil, for frying, or other non-flavored oil

OLIVE, PEPPERONI & MOZZARELLA BITES

Olive, Pepperoni & Mozzarella Bites image

Steps:

  • Slice Mozzarella cheese into 1/2" x 1/2" cubes. Drain olives from liquid. Using a toothpick, skewer an olive and push 1/3 way up the toothpick. Fold a piece of pepperoni into half or quarters and skewer next. Finally skewer mozzarella. Do not push toothpick all the way through mozzarella, only half way through as you do not want guests poking themselves in the mouth with the toothpick. If making ahead of time, arrange on tray and cover with saran wrap so that it does not dry out. When serving, serve plain or with a drizzle of pizza sauce on platter.

1 can of medium whole black olives
1 package of pepperoni
1 pound block of Mozzarella cheese
Pizza Sauce (optional)
