LUSCIOUS ALMOND CHEESECAKE

I received this recipe along with a set of springform pans from a cousin at my wedding shower 11 years ago. It makes a heavenly cheesecake. My son Tommy has already told me he wants it again for his birthday cake this year. -Brenda Clifford, Overland Park, Kansas

Luscious Almond Cheesecake image

Steps:

  • In a bowl, combine the wafer crumbs, almonds and sugar; stir in the butter and mix well. Press into the bottom of a greased 10-in. springform pan; set aside. , In a large bowl, beat cream cheese and sugar until smooth. Add eggs; beat on low speed just until combined. Stir in extracts. Pour into crust. Place on a baking sheet., Bake at 350° for 50-55 minutes or until center is almost set. Remove from the oven; let stand for 5 minutes (leave oven on). Combine the sour cream, sugar and vanilla. Spoon around edge of cheesecake; carefully spread over filling. Bake 5 minutes longer. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight., Just before serving, sprinkle with almonds and remove sides of pan. Refrigerate leftovers.

  • Place a greased 9-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square). Securely wrap foil around pan., In a small bowl, combine the cracker crumbs, 1/4 cup sugar and butter. Press onto the bottom and 1 in. up the sides of prepared pan. Place on a baking sheet. Bake at 350° for 10 minutes or until lightly browned. Cool on a wire rack., In a heavy saucepan over medium-low heat, cook and stir caramels and milk until melted and smooth. Pour 1 cup over crust; sprinkle with 1/4 cup pecans. Set remaining caramel mixture aside. , In a large bowl, beat the cream cheese, 1 tablespoon flour and remaining sugar until smooth. Add eggs; beat on low speed just until combined. Combine the apples, cinnamon and remaining flour; fold into cream cheese mixture.   • Crust: in small mixing bowl, beat butter until light and fluffy.
  • Add ground almonds, sugar and almond extract, and mix.
  • Work flour into mixture until ball of dough forms.
  • Place dough between two sheets of waxed paper and roll into 10" circle.
  • Remove paper and turn pastry in 9" springform pan, gently pressing against side and bottom of pan.
  • Refrigerate for 30 minutes.
  • Filling: in another bowl, beat cream cheese until smooth.
  • Beat in sugar, egg and extract.
  • Pour into chilled crust.
  • Topping: in a large bowl, combine sugar, flour and cinnamon.
  • Arrange apple slices in circular fashion until used up.
  • Sprinkle with almonds.
  • Bake in 425F oven for 10 minutes, then turn down to 350F and bake 30 - 35 minutes longer or until apples are tender.

Steps:

  • 1. Make the crust: In a small bowl, beat butter until fluffly. Add ground almonds and extract and mix. Work flour into mixture until a ball of dough forms. Roll out dough. I placed dough between two sheets of wax paper. Roll into a 10" circle. Place in a spring form pan and press dough slightly up the sides. Refrigerate 30 mins.
  • 2. Make filling: Beat cream cheese until smooth. Add sugar, egg and extract. Pour into chilled crust.
  • 3. Make topping: In a large bowl combine sugar, flour and cinnamon. Arrange apples on top of cake in a circular pattern until all slices are used. Sprinkle with brown sugar mixture and then sprinkle almonds on top.
  • 4. Bake in a 425 oven for 10 mins., then turn down to 350 and bake for 30-35 mins. and until apples are tender.

  • Preheat oven to 325°. In a bowl, beat butter, brown sugar and cinnamon until blended. Beat in flour, oats and walnuts until well blended. Cool slightly., For glaze, in a small saucepan, mix cornstarch, cinnamon and juice concentrate until smooth; bring to a boil. Reduce heat; cook and stir until thickened, about 1 minute. Add 1 tablespoon glaze to sauteed apples; toss to coat., Remove rim from springform pan. Top cheesecake with apples. Drizzle with glaze. Serve immediately or refrigerate until serving.
