APPLE BUTTER FOR THE SLOW COOKER
Slow cooker apple butter. Friends have told me it is THE BEST ever! We name ours 'Panther Butter' for our local high school football team!

Steps:
- Combine apples, brown sugar, cinnamon, allspice, salt, and cloves in a slow cooker.
- Cook on High until the apples are tender enough to easily mash with a fork, 4 to 6 hours.
- Puree apple mixture with an immersion blender until smooth.
- Sterilize the jars and lids in boiling water for at least 5 minutes. Pack apple butter into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
- Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 10 minutes.
- Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

- Place apples and vinegar into a large slow cooker, and place lid on top. Set on High, and cook for 8 hours, then turn to Low, and continue cooking 10 hours more.
- After 18 hours, stir in white sugar, brown sugar, cinnamon, clove, and allspice, and cook 4 hours more.

Slow cooker Apple Butter that my family and my wife's family enjoy. Takes a bit of time but the flavor is well worth it.

Steps:
- Peel and core apples.
- Roughly chop apples into"Bite-Sized" pieces.
- Fill slow cooker with apples, sugar, cinnamon,clove and salt.
- Stir to combine.
- Cover and cook on high for 1 1/2 hours.
- Turn to low and simmer 12 hours, opr until thick and a dark golden brown in color.
- Fill home canning jars with hot Apple Butter mix to within 3/4 inch of top, place lids on and tighten bands to finger tight.
- Water bath for 10 minutes.
- Remove from canner, tighten bands and let come to room temperature.
- Enjoy for up to one year.
- 2-3 weeks in the fridge after openning.

- Cut apples into 1-inch cubes; place apple cubes and 1 ½ cups of the sugar in a 6-quart slow cooker. Cover and cook on HIGH 6 hours.
- Stir in cinnamon, nutmeg, cloves, and remaining 1 ½ cups sugar. Cover; cook on LOW until apples are very soft, 4 hours.

- It is no longer necessary to sterilize jars before canning (hurray!) but you should make sure they are preheated enough to not crack when placed in hot water. You can put them in a clean dishwasher and run them through a quick wash cycle, or place them in a large pan with some water in a low heat oven (my lowest temp is 170 degrees) until you need them. I’ve even just put hot tap water in them before and left them on the counter.

- Add the quartered apples, apple cider vinegar, apple cider, and lemon juice to a large saucepan and set it over medium-high heat. Bring the mixture to a boil, stirring frequently. Cover the pan, turn the heat to medium-low, and simmer for 20 minutes, stirring occasionally. Remove the pan from the heat, keep covered, and let sit at room temperature for 6-8 hours.
- Set a food mill that's fitted with the largest straining plate over the bowl of your slow cooker. Push the apples and all the liquid in the saucepan through the food mill into the slow cooker bowl, which will separate the apples from the core and peel. Add all the remaining ingredients, except the vanilla, to the apple pulp and stir to mix.
- Cook the mixture on high for 8 hours, stirring every once in a while. Remove the lid and cook for an additional 3-4 hours on high, until the apple butter is thick and deep brown. (*See notes about temperature below.) To test that it's done, place a small dish in the freezer for a few minutes. Spoon a bit of the apple butter onto the frozen dish and let sit for about 5 minutes. This will cool the apple butter quickly, allowing you to test it's thickness.
