HOT APPLE CIDER TODDY
I got this recipe off the Food Network. I made up a batch for a Christmas party. We stat outside around the fire pit and sipped on the cider--Every one loved it. What makes this really nice is your guests can make it with or without the bourbon, and adjust the other ingredients as well. I put the hot cider in a thermos carafe with a pump on it, and placed the cinnamon sticks, spiced butter, rum-flavored whipped cream, and seasoned graham crackers out for them to help themselves for refills.

Steps:
- Heat cider in non-reactive saucepan.
- Combine butter, brown sugar, nutmeg, cinnamon, and cloves. Whip until butter becomes creamy and the ingredients are incorporated.
- Place graham crackers and pumpkin spice in plastic bag and crush with rolling pin.
- Combine rum extract with Cool Whip.
- In a footed coffee glass, or mug, place a single cinnamon stick and a slice of the spiced butter.
- Pour 1 shot of whiskey (optional but recommended ;o)).
- Ladle the hot cider into the glass or mug.
- Garnish with a dollop of the rum-flavored topping and sprinkle on some graham cracker crumb mixture.
- Serve warm.

BOURBON APPLE HOT TODDY
Steps:
- Combine the apple cider, brown sugar, nutmeg, vanilla seeds and orange zest in a medium saucepan over medium heat and simmer for 10 minutes. Divide among heat-proof mugs, top with a splash of bourbon if desired and a few dollops of whipped cream.

- Heat the apple cider in a nonreactive saucepan.
- In a bowl, combine the softened butter, brown sugar, nutmeg, cinnamon, and cloves. Whip until the butter becomes creamy and the ingredients are incorporated. Place the graham crackers and pumpkin pie spice in a plastic baggie and crush with a rolling pin. Combine the rum extract with the non-dairy whipped topping. In a footed coffee glass, place a single cinnamon stick and a slice of spiced butter. Pour 1 shot whiskey into the glass. Ladle the hot cider to fill the glass. Garnish with a dollop of rum-flavored topping and a sprinkle of graham cracker crumb mixture. Serve warm.

- To make spiced apple mix for 6 drinks. This will keep for 2 weeks if kept in the fridge.
- To create Spiced apple mix: Mix all ingredients except Lemon juice and Alcohol in a air tight container or jar and stir well. Leave to infuse for 2-3 hours. Taste it to ensure spice has infused well enough.
- When you are happy with the spice level, strain away the spices using a tea strainer, leaving just the liquid.
- Pour the spiced apple mix into a pan or kettle and heat. DO NOT BOIL, take off of the heat just before it starts to boil. Pour contents equally into 6 Irish coffee glass or coffee mug. Add 1.5oz of Gin or Bourbon and 0.75oz Lemon juice per individual drink.
- Garnish with Apple slice sprinkled with cinnamon powder.
- Be sure it is cool enough to drink and enjoy!

- In a saucepan heat cider and cranberry juice cocktail just until hot (do not let boil) and remove from heat.
- Stir in tequila and liqueur.
- Serve toddies in mugs, garnished with lime slices.
- Makes about 6 cups.

CELEBRATION HOT RUM BUTTERED CIDER - CIDER HOT TODDY
This spiced and hot rum buttered cider toddy is a wonderful drink throughout the cold winter months, and is perfect during the Festive Holiday Season as well. I use Scrumpy or local French Breton cloudy cider for this, which I believe is called Hard Cider in North America. Serve the hot rum buttered cider toddy in attractive warmed glasses and float a cinnamon stick on the top for that extra touch!

Steps:
- Stud the orange with the cloves.
- Gently melt the butter in a large saucepan before adding the cider; continue to heat the cider and butter for about 5 minutes, then add the clove-studded orange and the cinnamon sticks; heat gently for a further 5 minutes - do NOT allow it to come to the boil.
- Add the rum and heat for a further minute or two, again do not allow the toddy to come to the boil.
- Serve in warmed punch glasses or mugs, add a cinnamon stick to each glass if you wish.
- You can add more cider, rum and butter to the pan with the spiced fruit, throughout the evening.
