SIMPLE CINNAMON APPLE CAKE
This is a very simple tasting and versatile apple cake that I came up with while trying to use up some extra sour milk/buttermilk that l had.It doesn't contain any butter or oil ,so it might be good for someone watching their fat content.I would assume that you can use pears too with the same good results.This is our family's kind of cake because it's light and not too sweet.Enjoy!

- Preheat the oven to 350 degrees F and lightly grease a 9x13 inch pan.I also line it with parchment paper.
- Now ,thinly slice the apples and soak them in cold water with some lemon juice squeezed in, to prevent discoloration. Set aside.
- Next, whisk the eggs until frothy.Add the sugar and continue whisking until fairly creamy ( or until sugar dissolves and blends in).Add the salt ,cinnamon and baking soda.Then,mix in the sour cream,buttermilk,and orange juice (if using any).
- Gradually, add the flour to the mixture and mix until incorporated (do not overmix).If there are any lumps,mush them with a fork against the sides of the bowl.Gently fold in the raisins at this point,if using any.
- Finally, pour the batter into the greased pan and line the top with the apple slices in any pattern you prefer.
- Bake for 40-45 minute or until tester comes out clean.
- Allow to cool and cut into squares.Serve.
- NOTE: This cake tastes better after it stands for a while.

- For the apples: Preheat the oven to 350 degrees F. Butter a 9-by-13-inch glass baking pan.
- Mix together the apples, granulated sugar and cinnamon in a medium bowl. Set aside.
- For the cake: Combine the butter and granulated sugar in a large bowl. Using a hand-held mixer, beat on medium high until light and fluffy, about 3 minutes. Beat in the eggs one at a time until fully combined, then add the all-purpose flour, almond flour, baking powder, baking soda, cinnamon, salt and buttermilk. Beat on low speed until a few streaks remain, then fold together with a rubber spatula until fully combined. (Do not overmix.)

- Whisk together the brown sugar, granulated sugar, cinnamon, allspice, nutmeg and 1 1/2 cups water in a bowl and add to a 6-quart Instant Pot®. Add the apples to the pot. Follow the manufacturer's guide for locking the lid and set to pressure cook on low for 1 minute (see Cook's Note).

- Preheat oven to 325 degrees F. Let the eggs, milk and butter come to room temperature on the counter before beginning. (Butter goes on the counter last.)
- Butter the Bundt pan with 1 tablespoon of butter, then add 2 tablespoons of flour and shake and tap to coat the interior of the pan; set aside. Put the diced apples in a bowl with the cinnamon and lemon juice. In a large bowl or stand mixer add the butter and 2 cups of sugar and beat until smooth. Add the egg yolks, 1 at a time, and blend to completely incorporate before adding the next. The mixture will become very light in color. Add the buttermilk and the extracts and mix to combine. Stir in 3 cups of flour along with the baking powder and stir until incorporated.
- In a separate clean dry bowl, whisk egg whites until foamy, then add the remaining 1/2 cup of sugar and whisk until shiny and soft peaks form when removing the whisk from the whites. Gently fold this into the cake batter. Pour half of the batter into the prepared pan. Arrange the apples in the center of the ring all the way around, being sure they don't touch the outer or inner edge of the pan. Pour in the remaining batter and bake for 1 hour and 30 minutes. Remove the cake from the oven and cool completely. Put a large plate or cake plate on top of the pan, then holding both together, flip them so that the curved bottom of the Bundt pan is on the top and the plate is resting on a flat surface. Slowly remove the pan from the cake by lifting it straight up. Slice and serve.

- Make the cutouts: Preheat the oven to 425˚ F. Line a baking sheet with parchment paper. Stir together the granulated sugar and cinnamon. Unroll the pie dough and sprinkle the cinnamon sugar on top, pressing to adhere. Cut out about 20 leaf shapes using small cookie cutters. - Make the frosting: Set a heatproof bowl over a saucepan with 2 inches of barely simmering water. Add the brown sugar, egg whites and cinnamon to the bowl; stir with a rubber spatula until the sugar melts, about 8 minutes. (Pinch the mixture; it should feel smooth.) Remove the bowl from the pan and beat with a mixer on low speed until frothy. As the mixture begins to lighten in color, increase the speed to medium high and whip until stiff glossy peaks form. Beat in the butter 2 tablespoons at a time, making sure it is incorporated before adding more. (If the frosting separates, reduce the mixer to medium low and beat until it comes back together. If the frosting is soupy, refrigerate for 15 to 20 minutes, then continue beating.)
- Spread the frosting on the cake. Decorate with the leaf cutouts.

- Preheat the oven to 350 degrees F. Lightly grease a 13 by 9-inch glass baking dish with 2 teaspoons of the butter.

- Add the sugar and butter together in a bowl and mix together until both are combined and nice and fluffy
- Add the flour to the butter/sugar mix and combined together until it forms a gooey mixture
