APPLE CRISP WITH OAT TOPPING
This is the best dessert for the early fall when the sweet and firm apples are just in season. Use the best quality cinnamon you can get and get it from a spice merchant or even a store where you can get it bulk; it does make a difference. Within ten minutes of going in the oven the scent will fill the house and neighbors you loaned things to years ago will return them just to invite themselves in and wonder aloud if there is any left (Note: there isn't). Optional accompaniments would be caramel sauce, ice cream, and whipped cream.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Toss apples with white sugar and 1/2 teaspoon cinnamon in a medium bowl to coat; pour into a 9-inch square baking dish.
- Mix brown sugar, oats, flour, and 1 teaspoon cinnamon in a separate bowl. Use a pastry cutter or 2 forks to mash cold butter into the oats mixture until the mixture resembles coarse crumbs; spread over the apples to the edges of the baking dish. Pat the topping gently until even.
- Bake in preheated oven until golden brown and sides are bubbling, about 40 minutes.

APPLE CRUMBLE WITH GRANOLA TOPPING
This is a nice and simple recipe, the most time consuming thing is preparing the apples. The topping is nice and crunchy. Different fruits, such as dried cranberries, raisins, rhubarb or any type of berry could be added for a unique taste.

Steps:
- Preheat oven to 400F.
- Core, peel (or not) and slice apples.
- In a large bowl, stir together apples, brown sugar, lemon juice and cinnamon.
- Put in a 9"x9" casserole dish and dot with 1/3 of the butter.
- Place granola in a plastic bag and crush with a rolling pin to break it up.
- Place granola in a bowl and add the rest of the butter.
- Using a fork, push the butter into the crushed granola, working it through.
- Sprinkle the mixture over the apples.
- Cover the dish with foil and bake for 40 to 45 minutes.
- Remove foil and bake about 10 minutes longer or until the topping has browned.
- Let stand for approximately 10 minutes then serve with vanilla ice cream.
- Enjoy!

APPLE COBBLER WITH OATMEAL
My grandmother's recipe that always has guests begging for thirds! It is easy to make and especially decadent if served with vanilla ice cream

Steps:
- For best results with this recipe, use apples that hold their shape when baking and aren't too tart.
- Do not use Macintosh apples (too soft) or Red Delicious (too bland).
- I prefer Cortlands or Empires.
- Preheat the oven to 350 degrees- if you have a convection oven, do NOT use the convection feature- the dessert will be dry and overcooked on top.
- Use the regular baking feature.
- This recipe isn't good for microwave use.
- Peel and core the apples, then cut them into eighths or into large cubes.
- Distribute the apples evenly into a medium-sized ungreased baking dish (I like the white Corning/Pyrex oval dishes) and sprinkle the white sugar and cinnamon over top.
- Distribute 1 tbsp of the margarine in dollops throughout the top of the apples (no need to try to stir it in).
- In a separate medium mixing bowl, combine the remaining margarine, the oats, brown sugar and flour using your hands or a pastry whisk until it forms a crumbly, dry-ish mixture.
- (Note: if you like lots of crumble topping, feel free to double the ingredient quantities for the toppping).
- Pour the mixture over top of the apples and spread it out evenly so that all the apples are covered and the edges and corners hidden.
- Pat the mixture down lightly so that it looks sort of like a crust.
- Bake for 30-35 minutes, until the crumb top has darkened to a golden brown colour.
- Remove from the oven and let cool for at least 10 minutes before serving.
- Spoon out portions into large bowls and serve with ice cream, thick sweetened yoghurt or milk.

- In a large bowl, combine flour and salt; cut in the shortening until crumbly. Gradually add water, tossing with a fork until dough forms a ball. Wrap in plastic. - Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9-inch baking dish.
- Mix flour, sugar, butter, and cinnamon together in a bowl using a pastry blender or fork until crumbly; reserve 3/4 cup flour mixture to use as topping.

- Make filling:
- In a heavy 5-quart kettle simmer filling ingredients with a pinch salt, covered, until apples are fully plumped, about 15 minutes. Uncover mixture and simmer, stirring occasionally, until thick and any excess liquid is evaporated or absorbed, about 1 hour. (Reduce heat as liquid is evaporated or absorbed and stir mixture frequently toward end of cooking to prevent scorching.) Discard cinnamon sticks. Filling may be made 2 days ahead and cooled before being chilled, covered.
- Make topping:
- Cut butter into 1/2-inch pieces. In a food processor pulse butter, flour, and granulated sugar until crumbly. Transfer topping to a bowl and chill, covered, until ready to use.
- Make pastry dough when filling and topping are done:
- Preheat oven to 375°F.
- Cut butter into 1/2-inch pieces. In cleaned food processor pulse together pastry dough ingredients and a pinch salt until mixture begins to gather together.
- Press dough evenly onto bottom and up side of an 11-inch tart pan with a removable fluted rim. Line shell with foil and bake in middle of oven until shell is set, about 12 minutes. Gently remove foil (if foil sticks to shell, leave foil on and bake about 2 minutes more) and bake shell until edge is golden, about 5 minutes (tart shell will not be completely cooked).
- Immediately spoon filling into shell and crumble topping evenly over filling. Bake tart in middle of oven 30 minutes, or until topping is golden. Cool tart in pan on a rack. Tart may be made 1 day ahead and kept, covered and chilled, in pan. Reheat tart, uncovered, if desired or bring to room temperature before serving. Remove side of pan.
- Serve tart with whipped cream or ice cream.
