Steps:
- Preheat the oven to 400 degrees F.
- Heat the cider in a medium skillet over medium-high heat until it comes to a boil. Continue to cook until syrupy and reduced to about 2 tablespoons, 12 to 14 minutes. Set aside to cool slightly.
- Whisk the flour, cream of tartar, baking soda, cinnamon and salt in a medium bowl until smooth. Beat the butter with 1/2 cup of the granulated sugar and the light brown sugar in a separate bowl on medium-high speed until fluffy and smooth, 2 to 3 minutes. Beat in the reduced cider and the egg (the mixture may look slightly curdled). Stir in the flour mixture and 1/4 cup of the chopped apple chips until combined.
- Stir together the remaining 3 tablespoons of granulated sugar, 2 tablespoons of chopped apple chips and the apple pie spice in a small bowl. Roll heaping tablespoons of dough into balls, using lightly moistened hands if the dough is too sticky, and then roll in the spiced sugar mixture. Place the dough balls 3 inches apart on ungreased baking sheets and top with a few pieces of whole apple chips. Bake until the edges are just set but centers are still soft, 11 to 13 minutes, rotating pans halfway through the baking time. Cool 2 to 3 minutes on the baking sheet, and then transfer to a wire rack to cool completely.
APPLE SNICKERDOODLE DUMP CAKE
With an apple farm just down the road, I'm always looking for creative ways to use up those bushels. We love this cozy cake with caramel drizzle and a scoop of vanilla or cinnamon ice cream. -Rachel Garcia, Colorado Springs, Colorado

APPLE-DOODLES
When my Nana passed away a few years ago, I was lucky enough to receive her shoebox of recipes. Some were clipped from magazines and some were handwritten. Almost all had some handwritten note on them. I remember these cookies - almost alway made in the fall when her apples were ripe. I don't think the apples were peeled before shredding.

APPLE DOODLES
Holiday cookies that are apple and cinnamon flavored. The recipe came from a Taste of Home book and made 4 dozen--2 dozen of which I have eaten in the last hour. This definitely has a lot of cinnamon. If you do not like cinnamon, I would skimp on the amount. Mine only took 11 minutes to cook.

- Preheat your oven to 350°F. In a mixer, cream the butter on medium-high speed until it’s soft, smooth and light.
- Add both of the sugars to the creamed butter and mix until they are fully incorporated, and lighter in color. Stirring vigorously, add the egg to the mixture and beat until the batter looks uniform.
- In a separate bowl, stir together the flour, cornstarch, baking soda, salt and nutmeg. Then slowly fold into the batter until just combined. Then add in diced apples, and gently fold them by hand into the batter until well-distributed.
- Form balls of dough (I used a cookie scooper) and plop them in cinnamon sugar, swirling to coat. On a greased or parchment lined cookie sheet, place the dough balls 3 inches apart. Use your fingers to press and flatten the dough slightly and sprinkle an extra pinch of cinnamon sugar on the flattened surface.
