BOURBON FLAMED APPLES
Flambe! It's always fun to set food on fire intentionally (setting food on fire accidentally is entirely another matter, as I know first-hand). I like these over ice cream.

Steps:
- Combine the apple slices and lemon juice in bowl.
- Melt butter in medium skillet over medium heat.
- Add the apples and cook, turning frequently, until crisp-tender (about 10 minutes).
- Stir in the brown sugar.
- Add the bourbon and ignite, shaking the skillet gently until the flame subsides.
- Serve warm with ice cream (my favorite) or creme fraiche.

PINEAPPLE RUM FLAMBE
Steps:
- In a large skillet, cook the butter and brown sugar over medium heat, stirring, until the sugar dissolves. Place the pineapple in the syrup in a single layer, reduce the heat to medium-low, and cook for 3 to 4 minutes, until browned on the first side. Turn with a small spatula or tongs and cook on the second side until the pineapples are soft and richly browned. Add rum and flambe. Arrange on dessert plates.
FLAMBEED PINEAPPLE
For a showstopping fresh pineapple recipe, try flambe. We use this recipe as a topping for our Amaretto Pound Cake with Flambeed Pineapple but you can also serve it just with ice cream.

- Cut each pineapple round into 4 wedges. Trim core from point of each wedge, and discard; set wedges aside.
- Heat sugar in a large skillet over medium-high heat, stirring, until sugar melts and turns golden brown, 3 to 4 minutes. Add pineapple; toss to combine.
- Stand back, and carefully pour in liqueur; immediately tilt skillet slightly, and ignite alcohol. When flames subside and caramel melts, stir in cream, lemon juice, vanilla seeds, and salt. Reduce heat to medium; let sauce boil, stirring occasionally, until thickened, about 5 minutes. Spoon pineapple and sauce over cake slices, and serve immediately.

- Quarter the apples, cut out the cores and trim the ends. Heat the butter in a frying pan and toss in the apple wedges and sage. Cook for 2 mins, then sprinkle in the golden caster sugar and continue cooking for about 5 mins, stirring gently until golden and softened. Pour in the Calvados and cautiously flambé. Season lightly and keep warm until ready to serve.
TROPICAL FRUIT FLAMBé
This tropical fruit flambé is a very warm, soft, and sweet treat but you must have skill and determination.

Steps:
- Set a large pan on the stove over medium-high heat. Pour apple juice into the pan and add brown sugar; let it simmer until golden and bubbling, about 4 minutes.
- Put mango, banana, and strawberry slices in the pan with cinnamon. Stir to cover fruit with the sauce and cook for 3 minutes.
- Remove pan from the heat and add rum. Place back on the heat and use a long lighter to set it on fire. Once the flame has gone out, cook for 1 more minute.
- Divide fruit evenly between 3 bowls and top each with 1/2 scoop ice cream.

APPLE FLAMBE
Steps:
- 1. Bake cake as directed for 8-inch rounds. Cool and split each layer in two. Spread pie filling, cinnamon, lemon rind between each layer.
- 2. Ring outer edge with whipped topping. Saute apple slices in butter and place on top of cake. Just before serving, heat brandy and pour over apples. Flame and serve immediately!
BIRD'S APPLE BREAD PUDDING (FLAMBE')
This is one of my most requested desserts over the holidays, but I make it often throughout the year.

Steps:
- Preheat oven to 400°F Wisk all custard ingredients. Set aside.
- In frying pan, melt butter. Add raisins, sugar, and apples. Cook on med heat for about 5 minutes.
- Add applejack brandy and CAREFULLY Flambe' till alcohol is cooked off. Then set pan aside to cool.
- Place bread slices in bottom of 9 x 13 pan. Place apple mixture over bread. Pour custard over the apple mixture. Place in water bath and bake for 45 minutes.
- Cool 20 minutes to serve warm, 3 hours in fridge to serve later or to serve chilled. Dust lightly with powdered sugar before serving.
