- FOR THE SALISBURY STEAK: Measure bread crumbs, salt, pepper, onion, milk, soy sauce and bouillon powder into bowl. Stir.
- Add ground beef. Mix well. Shape into 4 small oval patties 3/4 inch thick. Broil 8 to 10 minutes per side until browned and cooked through. Makes 4 "steaks".
- FOR THE SAVORY SAUCE: Melt butter in frying pan. Mix in flour and salt. Stir in apple juice, milk and green onion. Heat and stir until mixture boils and thickens, being sure to loosen any brown bits in pan. Pour over steaks. Serves 2.

I found the basic recipe in the 2007 Taste of Home Annual Recipes. It was sent in to them by Toni Martin of Byron Center, Michigan.But I added alot of different things, also changed the way that it was prepared and cooked. Submitted to " ZAAR " on October 21, 2009.

- In a medium size bowl, add egg, milk,breadcrumbs, 1 Tablespoon gravy mix, onion, garlic powder, red pepper flakes, and ground beef.
- Mix all ingredients together, DO NOT over mix ( you do not want the meat to get dry ) divide meat mixture into two oblong patties, about 3/4 inch thick.
- Using a skillet large enough to hold both patties, fry over medium heat until desired doneness is reached ( I cooked mine for about 10 minutes total ).
- Remove patties from skillet, and keep warm.
- In the same pan that the patties were cooked in, ( if not using lean beef,drain "drippings " ) add rest of ingredients and stir until thickened and no lumps remain.
- Pour gravy over patties, eat and ENJOY !

- Mix meat, salt and pepper; shape mixture into 2 oval patties.
- In 8-inch skillet, cook patties over medium heat, turning occasionally, until done, 8 to 12 minutes.
- Remove patties to warm plate.
- Cook and stir mushrooms in same skillet until light brown.
- Stir in flour.
- Cook over low heat, stirring until mixture is bubbly.
- Remove from heat.
- Add enough water to reserved mushroom liquid to measure 1/2 cup.
- Stir liquid and bouillon into flour mixture.
- Heat to boiling, stirring constantly.
- Boil and stir 1 minute.
- Pour on meat.

- Gently mix the beef, egg, onion, cracker crumbs, sage, 1/2 teaspoon salt and a few grinds of pepper in a large bowl using your hands. Divide into 4 equal portions and shape into oval patties, about 1/2 inch thick.
- Heat 1 tablespoon butter in a large skillet over medium-high heat. Brown the patties, about 4 minutes per side. Transfer to a plate.
- Add 1 tablespoon butter to the skillet and cook the mushrooms, stirring occasionally, until slightly browned, about 2 minutes. Stir in the Worcestershire sauce, and salt and pepper to taste, scraping up any browned bits from the bottom of the skillet with a wooden spoon. Sprinkle in the flour and stir, then stir in the hot water and simmer until the sauce begins to thicken, about 2 minutes. Add the remaining 1 tablespoon butter, swirling to combine.
- Return the patties and any juices from the plate to the skillet. Simmer until the sauce thickens and the patties are cooked through, about 2 minutes. Sprinkle with parsley and season with salt and pepper. Serve with noodles, if desired.

- 1. In a large bowl, mix together 1/3 cup condensed French onion soup with ground beef, bread crumbs, egg, salt and black pepper. Shape into 6 oval patties.
- 2. In a large skillet over medium-high heat, brown both sides of patties. Pour off excess fat.
- 3. In a small bowl, blend flour and remaining soup until smooth. Mix in ketchup, water, Worcestershire sauce and mustard powder. Pour over meat in skillet. Cover, and cook for 20 minutes, stirring occasionally.
- My Note: Here are the changes I made to what is now my favorite dish. In the gravy, I used a can of French Onion soup as well as a can of Cream of Mushroom and a packet of Dry Onion Soup or sauteed onions. I omitted the salt due to the high sodium content in the soups. I'm glad I did. I doubled the gravy except for the ketchup -- kept it at 1/4 cup while doubling the rest. I also added a jar of mushrooms to the gravy. After browning each side of the patties (and yes, having them fall apart slightly), I transferred the patties to a foil-lined casserole dish, put the gravy on top, covered the dish, and cooked it at 375*F. for 45 minutes. I was worried the patties wouldn't get all the way done because they were pretty thick, but they turned out perfect! so simple to make. So, if you're craving an old cafeteria food favorite - don't waste your time with the recipe for the sauce - buy a box of Lipton Mushroom Onion soup mix and make the gravy with it - you won't regret it! We had it with brown rice (and had just enough wonderful gravy to go along with it!) and steamed broccoli. This is a new favorite recipe for my wife and me. For those who had trouble keeping the patties together, try this it was suggested to me. Instead of cooking in a skillet, place browned patties in a foil-lined casserole dish, pour gravy over top, and bake at 400 for 30 minutes Your patties will stay together nicely! I do like to play with my food. I would love to hear any improvements and/or variations you make to this simple recipe. Enjoy!

SALISBURY STEAK WITH BROWN GRAVY

- Heat 1 tablespoon of the oil in a large skillet over medium-high heat. Add the onion and saute until soft, about 6 minutes. Put 1/2 of the onion in a large bowl and the remainder in another bowl. In the large bowl add the beef, bread crumbs, grill seasoning, Worcestershire sauce and the egg. Mix to combine everything well and form the mixture into 5 oval patties. Heat the remaining tablespoon of oil in the same skillet over medium-high heat. Cook the patties until they are well browned, about 4 to 5 minutes per side. Remove the steaks and pour off all but 2 tablespoons the fat. (The patties will not be cooked through and will finish cooking in the gravy.)
- Put the pan back on the heat, add the mushrooms, and cook for 5 minutes. Add the remaining onions, sprinkle in the flour, and cook for 2 minutes. Add the beef broth and bring it to a boil. Return the patties to the pan, reduce the heat to a simmer and cook until the sauce has thickened and the steaks are cooked through, about 10 minutes. SALISBURY STEAK
Steps:
- Saute onions, and garlic in 1 tablespoon butter until translucent and set aside to cool. Mix beef with cooled onion mixture, eggs, bread crumbs, parsley, and mushrooms. Form into 4-ounce patties and saute in the remaining 2 tablespoons of butter until golden brown on both sides and set aside. In saucepan melt 2 ounces of butter and add flour and cook over low heat for 1 minute until wet sand consistency. Begin to add stock 1/3 at a time whisking and bringing to simmer each time making sure there are no lumps. Add mushrooms and simmer for 1/2 hour. Place patties in a roasting pan and pour gravy over patties and bake in a preheated 375 degree oven for 45 minutes. Garnish with grilled onions and serve.
RETRO SALISBURY STEAK

- Place the ground beef, breadcrumbs, dry mustard, Worcestershire sauce, 1 tablespoon of the ketchup, 1 tablespoon of the soup mix and some salt and pepper in a bowl and knead until well combined. Form into 4 oval patties, and using the side of your hand, make lines across the patties to give them a "steak" appearance.
- Place a skillet over medium-high heat and add the butter and oil. When the butter has melted and the oil is hot, fry the patties on both sides until no longer pink in the middle, about 5 minutes per side. Remove from the skillet and pour off all but 2 tablespoons of the grease.
- Sprinkle over the flour and let cook for a minute. Remove the skillet from the heat and deglaze with the sherry, scraping the skillet to release all the flavor. Return to the heat and add the beef broth, remaining 1 tablespoon ketchup and remaining soup mix. Bring to a boil and let thicken, 2 to 3 minutes. Taste and adjust the seasoning as needed.
- Remove the skillet from the heat and return the patties to the gravy, spooning a little gravy over each. Garnish with the parsley.

- For the meat mixture: Combine the ground beef, breadcrumbs, ketchup, dry mustard, Worcestershire sauce, bouillon and some salt and pepper. Knead until all combined. Form into 4 to 6 oval patties, and then make lines across the patties to give them a "steak" appearance.

- Saute half of chopped onion in 1 Tabsp hot oil in medium skillet over medium heat until tender. Add garlic, and saute 30 seconds. Remove from heat and let cool.
- Combine cooked onion mixture, beef, and next 4 ingredients, 1/4 teasp salt, and 1/2 teasp pepper. Shape into 6 patties.

- Preheat oven to 350 degrees. Mix ingredients for patties in large bowl and then shape in 8 oval patties. Place in lightly greased baking dish. Bake for 40 minutes.
- While patties are cooking, prepare gravy. Heat vegetable oil and whisk in flour. Add both soups to the mixture and continue to whisk. Add Worcestershire sauce and salt and pepper to taste. If you like your sauce thinner, just add water until desired consistency. Turn on low heat and continue to whisk occasionally.
- When patties have cooked for 40 minutes, remove from oven and drain off excess grease. Cover with gravy and return to oven for an additional 10 minutes.

When I was a kid, we didn't have smartphones or the internet, all we had was a TV. But we didn't care because as we watched, we got to enjoy a little something called a "TV dinner." - Combine beef, black pepper, dry mustard, ketchup, Worcestershire, soy sauce, egg, cayenne, and bread crumbs in a mixing bowl. Use a fork or your hands to stir the ingredients until very evenly distributed.
- Cover with plastic wrap and refrigerate for 2 hours, or up to overnight.

Transfer to a glass measuring cup, scraping the pan clean with a spatula, and reserve.
- Remove meat from the refrigerator and divide into 4 equal portions. Moisten hands and form into oval patties, about 1/2 inch thick. Season both sides of the patties lightly with salt.
- Melt 2 tablespoons butter in the previously used nonstick pan over medium-high heat. Add the patties and cook until browned, 2 to 3 minutes per side. Pour in gravy and bring to a simmer; reduce heat to medium and continue to cook until gravy is piping hot, and the meat is just cooked through and springs back lightly when touched, about 5 minutes.
