EASY APPLE KUCHEN
One of my mother's favorite recipes. Great with your morning coffee or a cold glass of milk.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Beat milk, shortening, egg, and vanilla extract together in a bowl until smooth. Stir 1 1/2 cups flour, 1/2 cup sugar, baking powder, and salt into milk mixture until dough comes together. Spread dough out into the bottom of a rimmed baking sheet.
- Spread apples over the dough on the baking sheet.
- Stir 1 cup sugar, melted butter, 1/4 cup flour, and cinnamon together in a bowl until topping is combined. Sprinkle topping over apples.
- Bake in the preheated oven until apples are tender and topping is golden, about 40 minutes.

- Preheat oven to 350°. Place 2 cups flour and salt in a food processor; pulse until blended. Add 1 cup butter; pulse until butter is the size of peas. While pulsing, add just enough ice water to form moist crumbs. Press mixture onto bottom of a greased 13x9-in. baking pan. Bake until edges are lightly browned, 20-25 minutes. Cool on a wire rack., In a large bowl, combine apples, 1 cup sugar and cinnamon; toss to coat. Spoon over crust. Place remaining flour, butter and sugar in food processor; pulse until coarse crumbs form. Sprinkle over apples. Bake until golden brown and apples are tender, 60-70 minutes. Cool completely on a wire rack. Cut into bars.

- Preheat the oven to 450 degrees. Lightly grease and flour a 9x13-inch pan.
- To make the crust: Place the flour, sugar, and salt in a large bowl or food processor fitted with a steel blade and mix to combine. Add the vanilla and butter, a little at a time, and mix until it resembles cornmeal. Press into the prepared baking pan and transfer to the oven. Bake until slightly golden but not brown, about 12 to 15 minutes. Set aside to cool.
- Lower the oven temperature to 400 degrees.
- To make the filling: Place the cream cheese, sugar, and vanilla in the bowl of a mixer fitted with a paddle and beat until creamy. Add the egg, mix to combine, an pour over the cooled crust.
- Place the sugar and cinnamon in a small bowl and mix to combine.
- Place the apples on top of the filling in two or three columns. Sprinkle with the cinnamon sugar and transfer to the oven. Bake until firm and a rich brown, about 20 minutes. Cut into 20 to 24 pieces.

- Preheat oven to 350°F.
- Mix 1 1/4 cup flour, baking powder, 2 tsp sugar, and salt and sift once.
- Cut 1/2 cup butter into dry mix with a pastry blender to pea size.
- In a small bowl, beat egg with 2 T milk and add to dry mix.
- Mix thoroughly and pat dough into a greased or oiled 9x13-inch baking dish.
- Pare and core apples.
- Cut into thin wedge slices and place on dough in rows until covered. We would cover the thin end of one apple with the thick end of the other.
- Dot apples with 2 T butter and mix 3/4 cup sugar, 1 1/2 Tbs flour and cinnamon together.
- Spread dry topping over dotted apples, and bake in oven for 30-45 minutes, until golden brown.

- Preheat oven to 325. In a mixing bowl, combine flour, sugar, salt, baking powder, and butter. Blend with a pastry blender or your hands. In a small bowl, beat egg yolks. Add vanilla and milk. Add egg mixture to the crumbled dry ingredients, stir gently with a spoon until just blended. Press the dough on the bottom and up the sides of an 8x12x2 greased glass baking dish. You may use a 9x13 pan but the crust will be thinner, and a larger sized apple should be used so you will have 3 rows of apple slices. - Cut the butter into the dry cake mix until it is crumbly.
- Press the mixture into a greased 9x13 baking pan in order to form the crust.

A delicious German apple cake made with a yeast dough. I usually make the dough at night, and let it rise in the fridge overnight to bake it the next morning.

Steps:
- Put 2 1/2 cups of the flour in a bowl with the salt, sugar, and yeast.
- Beat the eggs and add them, with the vanilla, lemon zest, and nutmeg, to the lukewarm milk.
- Stir the liquid ingredients into the dry ingredients, to make a medium-soft dough, being prepared to add more flour as necessary.
- Work in the soft butter and knead by hand for about 10 minutes.
- When the dough is ready it will appear smoother, and springier.
- Cover with a tea towel and leave till doubles (1 to 1 1/4 hours), or leave to rise in a cool place overnight.
- Punch down dough and press in a 9X13 inch pan, if the dough seems like it won't stretch to fit, let it rest for 10 minutes.
- Once the dough is pressed into the pan, let it rise for an additional 15-20 minutes.
- Heat the oven to 400°F.
- Peel and core the apples and chop them finely.
- When the dough is ready, beat the egg with the cream, grate over a little nutmeg and brush the top of the dough with this mixture.
- Cover the egg glazed dough with the apples, then mix together the sugars and allspice and sprinkle over.
- Top with the almonds and put in the oven for 15 minutes.
- Turn oven down to 350°F and cook for another 15 minutes or so, until the dough is swelling and golden and the edges.
- Remove from the oven and make a runny icing, spoon and trickle it over the cake.
- Cool for about 15 minutes and serve warm.

- Heat oven to 350°F. Grease bottom and side of springform pan, 9x2 inches, or round pan, 9x1 1/2 inches, with shortening.
- In medium bowl, beat 1/2 cup sugar, the butter and egg with electric mixer on low speed about 30 seconds or until smooth. Beat in Bisquick. Spread over bottom and 1 inch up side of pan.
- In small bowl, mix yogurt and egg until smooth. Stir in apple; spoon over batter in pan. Mix 1/4 cup sugar and the cinnamon; sprinkle over apple mixture.

- In the bowl of a food processor, place 2 cups of flour and the salt and pulse once or twice to combine. Cut 1 cup (2 sticks) of butter into pieces, then add to flour mixture. Pulse again until butter is the size of peas. Add one tablespoon of ice water at a time, pulsing after each addition until moist crumbs form. (Avoid adding too much water – you still want a crumbly texture.)
- Pour the crumbs into the prepared baking dish and evenly spread across the bottom, pressing gently down with your fingers. Bake 20 to 25 minutes or until edges are lightly golden. Remove from oven and allow to cool slightly
- While the crust is baking, peel and slice your apples, then place in a large mixing bowl. Add 1 cup sugar and cinnamon, then toss to coat the apples. Pour the apple slices over the baked crust and spread evenly in the pan.
