Steps:

  • In a large bowl, combine the apples, sugar, water, tapioca, cinnamon and nutmeg; toss to coat. Let stand for 15 minutes., In a large bowl, combine the flour, baking powder and salt; cut in shortening until crumbly. Gradually add water, tossing with a fork until dough forms a ball. Divide in half, making one half slightly larger. , On a lightly floured surface, roll out larger portion of pastry to fit a 9-in. pie plate. Transfer pastry to plate; trim even with edge of plate. Add filling; dot with butter. Roll out remaining pastry; make a lattice crust. , Trim, seal and flute edges. Brush with milk; sprinkle with sugar. Cover edges loosely with foil., Bake at 400° for 15 minutes. Reduce heat to 350°; bake 40-50 minutes longer or until crust is golden brown and filling is bubbly. Cool on a wire rack.

Rustic Apple Tart image

Steps:

  • Preheat the oven to 350 degrees F.
  • Toss the apples, sugar, cinnamon, allspice, and salt together in a large bowl.
  • Roll the pastry, on a lightly floured surface, into a 12-inch round. Line a baking sheet with parchment paper and spray with cooking spray. Arrange the pastry on the baking sheet. Put the apple mixture in the center of the pastry and spread evenly to the edges, but leaving enough dough to fold over to create a crust on the rim. Brush the crust with melted butter and drizzle the remaining butter over the apples.
  • Bake until the crust is golden brown, about 40 minutes.
  • While tart is cooking, put the peach preserves into a microwavable bowl and microwave until syrupy, about 20 seconds.
  • Remove the tart from oven and brush with the warmed preserves. Pull the parchment paper off the sheet tray and transfer the tart to a wire rack to cool. Cut as desired and serve.

Mincemeat, apple & cranberry lattice tart image

Steps:

  • Heat oven to 200C/180C fan/gas 6 and put a baking sheet in to heat up. Lightly flour a work surface, roll out the puff pastry to a 30 x 45cm rectangle, then put on a sheet of baking parchment. Mix together the apples and cranberries, then add the cinnamon, mixed spice, sugar, lemon zest and mincemeat, and mix again.
  • Arrange the pastry in front of you with a short edge nearest to you. Spread the mincemeat mixture in a line down the centre, about 12cm wide, leaving 2cm of pastry at the top and bottom.
  • To create the lattice pattern, start at the top of the pastry and cut a 1.5-2cm-wide horizontal strip of pastry on both sides of the mincemeat filling (so it is still attached next to the filling). About 1.5cm in from the filling, cut out a 0.5cm strip of pastry and remove this, then cut another 1.5-2cm strip (you're creating a pattern like the teeth of a comb). Repeat this method until you get to the bottom of the pastry. You'll need to cut out the final strip and remove this. Fold the top and bottom flaps of pastry up and over the filling. Fold the strips of pastry diagonally over the filling, starting from the top until you reach the bottom, creating a lattice pattern. You can now chill the tart for up to 2 days, or freeze for up to 2 months.
  • Brush the tart with the egg and sprinkle with the extra sugar. Using the baking parchment, transfer the tart to the hot baking tray. Bake for 20-25 mins or until golden brown on top (add an extra 10-15 mins if baking from frozen). Leave to cool for 5 mins before serving with whipped cream or brandy cream.

Steps:

  • Heat your oven to 180 degrees and let it preheat.
  • In a big bowl sieve in your flour and add your salt and baking powder and give it a light stir.
  • Cut your butter into small fragments (easier to mix the softer but no too soft or melted)add your egg and egg yolk and natural yogurt and sugar.
  • Using your hand you mix the mixture toghter in a squashing like motion until it forms a ball of dough , (if you find it too wet add more flour if you find it too dry add more yogurt).
  • You can now put the dough into the fridge while you make the apple filling.
  • Peel the apples from the skin and dice them into small cubes.
  • In a saucepan boil 1/2 cup of water with the sugar and add half the cinnamon.
  • when the water reaches boiling you can throw in the apples and cover them in the rest of the cinnamon,mixing the apples you might get too much water you can pour some out into a seperate bowl at the side.
  • Letting the apples soften and boil for about 10 mintues or untill they arent hard and can mush easily setting them aside to cool.
  • Taking your dough out the fridge you can flour an area of your worktop preparing it for the dough.
  • Cut about 3/4 of your dough and roll it out to the size of your pan laying it down and poking small holes at the bottom when in the pan.
  • Scoop out all your apple filling and spread it out eavingly in the pan.
  • Rolling out any residue dough and using a ruller to cut our 1inch wide rectangles to fit your pan.
  • You should have aproximentally 8 of these stripes laying half of them horizontal and the rest vertical.
  • Cut off and excess of the sides and sprinkle the sugar and optional egg wash and put in the oven for about 40min.

Steps:

  • Crust:
  • Preheat oven to 350. cream together the butter and sugar. Beat in the egg yolks until smooth.
  • In a separate bowl, combine the flour, ground nuts, cinnamon, cloves and baking powder.
  • Add the dry mixture to the butter mixture and mix till just combined.
  • Using a 9 inch tart pan with removable bottom, press 2/3 of the dough into the bottom and up the sides of the pan about 1/2 inch. Set aside.
  • Filling: In a medium bowl, toss the apples with the lemon juice to prevent them from browning. Add the cranberries and set aside.
  • In a medium skillet, melt the butter over low heat.
  • Add the sugar and brown sugar adn cook for 1-2 minutes, until sugar starts to melt.
  • Stir in the orange juice till combined. Add the apple-cranberry mixture and continue stirring with a wooden spoon until the fruit is coated and teh mixture is bubbly, about 3-4 minutes.
  • Remove from heat and allow to cool.
  • Assembly: spread the apple mixture evenly in the crust, dot with the butter.
  • Roll out the remaining dough approximately 1/4 inch thick and cut into 3/4 inch strips long enough to cover the tart.
  • Arrange the strips diagonally 1/2 inch apart in a lattice pattern over the apple filling.
  • Whisk together the egg and water and brush the strips lightly with the mixture. Bake for 40 minutes or till golden brown.
  • Cool slightly before serving.
  • Tart may be baked up to 24 hours in advanced and reheated for about 10 minutes before serving.

  • In a 10-in. cast-iron or other ovenproof skillet, heat 3/4 cup sugar, stirring constantly until it is liquefied and golden brown.
