- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, cream together the shortening and sugar. Beat in the eggs until well blended. Combine the flour, baking powder, cinnamon, nutmeg, and salt; stir into the sugar mixture until well blended. Fold in the walnuts, oats and apples. Drop dough by spoonfuls about 2 inches onto ungreased cookie sheets.
- Bake for 12 to 15 minutes in the preheated oven. Let cool on wire racks.

APPLE-OATMEAL COOKIES
My family went through an oatmeal phase one brutal winter when we all wanted a nice hot bowl of oatmeal for breakfast every day. Except for Buddy Jr., who hated oatmeal. Lisa tried everything, but nothing worked, till she tried Granny Smith apples, with a little help from brown sugar and cinnamon. That combination led to these cookies, which are packed with flavor and texture, and just as welcome on a cold, wet day as those bowls of oatmeal were.

- Position a rack in the center of the oven and preheat the oven to 350 degrees F.
- Heat a small, heavy saucepan over medium-high heat. Add 2 teaspoons of the butter, and let melt. Add the apple, 1 teaspoon of the brown sugar, the cinnamon, and a scant pinch of salt, and stir well to combine. Cook, stirring occasionally, until the apples are slightly softened, about 3 minutes.
- In the bowl of a stand mixer, cream the remaining butter and brown sugar on medium-high speed until the mixture appears light and fluffy. Add the egg and vanilla and beat until incorporated.
- Combine the flour, baking soda, and 1/4 teaspoon salt in a separate bowl. With the mixer on low, beat in the dry ingredients, including the oats, then fold in the apples by hand.
- Line 2 baking sheets with parchment paper. Scoop out 2 tablespoons of dough at a time and arrange them at least 2 inches apart on the prepared cookie sheet. Bake, rotating the sheets top to bottom halfway through baking, until the cookies appear set, 15 to 17 minutes. Remove and let cool for a few minutes on the sheet, then transfer to a baking rack to cool completely.
- To make the optional glaze: Put the confectioners' sugar, the vanilla extract, and 1 tablespoon water in a medium mixing bowl and whisk until the mixture is smooth. Drizzle the glaze over the cookies using a spoon.
APPLE OATMEAL COOKIES

- Heat oven to 375°F. Spray cookie sheet with cooking spray. In large bowl, beat butter, granulated sugar and brown sugar with electric mixer on medium speed until creamy. Beat in vanilla and eggs, scraping sides occasionally, until blended.
- In medium bowl, mix flour, baking soda, cinnamon and salt. Gradually beat flour mixture into sugar mixture. Stir in oats and apple. Onto cookie sheet, drop dough by rounded tablespoonfuls 2 inches apart.
- Bake about 10 minutes or until edges are light golden brown. Cool 1 minute; remove from cookie sheet to cooling rack. Cool completely, about 15 minutes.
- In medium bowl, beat powdered sugar and apple juice until smooth, using wire whisk or fork. Drizzle over cooled cookies on cooling rack. Let stand about 1 hour or until glaze is set.

CHEWY APPLE OATMEAL COOKIES
I had "inherited" bags and bags of apples and was trying to use them up and found this recipe in the August/September 2006 Taste of Home magazine that was chock full of other apple recipes. In the second batch, I added walnuts which were also a very nice addition. Even though the recipe calls for dried apples, don't let that make you hesitate in making these. I used chopped apples - 1 cup - and they were delicious! Also, be sure to flatten these a bit on the cookie sheet, they do not spread out while baking.

I found this recipe on a search for lemon zest recipes (I had just gotten my Microplane Zester and had fallen in love with it and was zesting lemons and oranges all over the place). The lemon zest doesn't have a starring role in these cookies, but they are pretty yummy, very apple pie-ish.

- Preheat the oven to 300 degrees F.
- In a bowl, combine the flour, oats, salt, baking soda, cinnamon, cloves and lemon zest.
- Mix well with a wire whisk and then set it aside.
- Cream the butter and sugar together in a large bowl with an electric mixer.
- Add the egg, applesauce and honey, and beat at medium speed until smooth.
- Add the flour mixture, fresh apple and raisings.
- Blend at a low speed until just combined.
- Don't overmix it, and don't worry, it's supposed to be a soft dough.
- Drop the dough by rounded tablespoons on to ungreased cookie sheets (I like to cover the sheets in parchment paper).
- The cookies should be spaced about 1 ½ inches apart.
- Bake for 18-22 minutes, or until the bottoms are golden.

OATMEAL APPLE PIE COOKIES
Perfectly soft and chewy little apple pie tart-like cookies with oatmeal! These little guys took first place at my work cookie contest, so I guess they're pretty good!

- Beat butter, sugar, and brown sugar for cookie dough in a bowl with an electric mixer until creamy. Stir in eggs and vanilla.
- Combine flour, salt, baking soda, cinnamon, and apple pie spice in a separate bowl. Gradually mix into the wet ingredients until incorporated. Mix in oats and walnuts. Cover and chill in the refrigerator for at least 1 hour.
- Preheat the oven to 375 degrees F (190 degrees C). Set out two 24-cup mini muffin tins. Place paper towels under 2 wire racks.
- Combine apples, butter, sugar, and cinnamon for filling in a microwave-safe bowl; microwave on high for 3 minutes, stirring halfway through to distribute the butter, until apples have softened. Transfer to a strainer to drain and cool.
- Roll chilled dough into walnut-sized balls. Fill each muffin cup with a ball and press down to flatten slightly.
- Bake in the preheated oven for 10 minutes. Remove and cool for 2 minutes. Press a shot glass down in the middle of each cookie to form it into a cup shape. Transfer from the pan to the prepared wire racks to cool.
- Put apple filling into the center of each cookie, making sure it's evenly distributed to fill all cookies.
- Beat egg whites for icing in a glass, metal, or ceramic bowl until foamy. Mix in caramel syrup, cinnamon, and cream of tartar. Gradually mix in 2 cups powdered sugar and mix until it reaches a good drizzling consistency, similar to that of the caramel syrup. Add more powdered sugar if necessary; you don't want it to be so thin that it will run.
- Drizzle icing over the cookies; it's okay if it melts into the apple filling.
- Enjoy right away while they're super fresh, or wait until icing hardens, about 3 hours.
