BLACKBERRY & APPLE PASTIES
A delicious way with Autumn fruit in tasty pasties

Steps:
- Heat oven to 200C/fan 180C/gas 6. Dust a work surface with icing sugar, then unroll the pastry and cut out 4 rounds using a small side plate as a template.
- Combine the apples, sugar and blackberries and put a small pile on each pastry circle. Dampen the edge of the pastry, then fold over to encase the fruit. Pinch and fold the pastry over along one edge to make a pasty shape. Slash each pasty 3 times, lift onto a baking sheet and bake for 20 mins or until puffed and golden. Serve with cream.

- In a large bowl, combine flour and salt. Cut in butter until crumbly. Sprinkle with vinegar. Gradually add milk, tossing with a fork until dough forms a ball. Cover and refrigerate for 20 minutes or until easy to handle. , Meanwhile, in another bowl, combine the brown sugar, flour and cinnamon. Cut in 2 tablespoons butter until crumbly; set aside. Melt the remaining butter. Cut apples into 1/2-in. rings., Shape dough into sixteen 11/2-in. balls; roll into 5-in. circles. Brush with 2 tablespoons melted butter. , Place one apple ring in the center of each circle. Top each with 2 teaspoons brown sugar mixture. Fold edges of dough over apple rings, leaving centers uncovered; crimp edges. Brush dough with remaining melted butter; sprinkle with sugar., Place 1 in. apart on ungreased baking sheets. Bake at 375° for 30-35 minutes or until golden brown and apples are tender. Serve warm.

PINKY'S APPLE PASTIES
These Apple pasties are great and very few ingredients, but you will have to make plenty as I discovered because they go fast and everybody wants more. I almost regret starting them as I get plenty of demand from my family for them. I found this in an old english country side cook book, and its so easy and a hit.

Steps:
- Peel and core Apples then chop into small pieces and place with butter in saucepan, add 1 and a half cups sugar then cloves.
- Heat slowly and gently with lid on so the apples and sugar dont burn or brown. Stir regularly.
- The apples should be just tender, then leave aside to cool and remove and discard cloves.
- When apple mix is cool, preheat oven to 200 degrees celsius, cut sheets of pastry into quarters, place a portion of apple mix in middle and make into pastie shapes or triangles if your in a hurry like I do.
- Place apple pasties onto sprayed baking tray.
- Brush over with egg white and sprinkle with sugar.
- Place in oven and cook until golden brown.
- Serve warm with custard or ice cream, or there even great cold as a travelling snack or for picnics.

APPLE PASTIES
Steps:
- Preheat the oven to 375°F.
- Separate the egg, placing the egg yolk in a large bowl, reserving the egg white for later use. Add the sour cream, sugar, flour, salt, and cinnamon and stir until combined. Peel and core the apples and dice into 1/2-inch pieces. Add the apples to the bowl and stir until completely coated.
- Lay the piecrusts on a flat work surface and spoon one-half of the apple mixture in the center of each piecrust, avoiding the edges. Fold the dough over to form a half circle, gently roll up about 3/4 inch of the open edges and press gently to seal. Lightly beat the egg white until broken up, but not frothy and brush on the dough. Bake for 30 to 35 minutes, until golden brown. Cut each pasty in half and serve warm.

- In a large bowl, stir shortening and water until shortening is melted. Gradually stir in flour and salt until a very soft dough is formed; cover and refrigerate for 1-1/2 hours. , Cut potatoes and rutabagas into 1/8- or 1/4-inch cubes; do not make cubes too large or they will not cook properly. Gently combine ground beef and pork; break into small crumbles. In a large bowl, combine potatoes, rutabagas, onions, meat mixture and seasonings. , Divide dough into 12 equal portions. On a floured surface, roll out 1 portion at a time into a 8-in. circle. Mound 1-1/2 to 2 cups filling on half of each circle; dot with 1 teaspoon butter. Moisten edges with water; carefully fold dough over filling and press edges with a fork to seal. , Place on ungreased baking sheets. Cut several slits in top of pasties. If desired, brush with cream or beaten egg. Bake at 350° until golden brown, about 1 hour. Cool on wire racks. Serve hot or cold. Store in the refrigerator.

CHEESE, APPLE & POTATO PASTIES

- Line a baking tray with baking parchment. Dice 250g of the butter and tip into a mixing bowl. Add the flour, 1 tsp salt and 1½ tsp black pepper and rub together with your fingers until the mixture resembles fine breadcrumbs, or use a food processor. Stir in 8 tbsp cold water, then bring the mixture together with your hands to create a firm, smooth dough. Cover and chill for 20 mins.
- Cut the dough into six equal-sized pieces and roll each portion into a ball. Chill, covered, for a further 15 mins. Meanwhile, tip the potatoes, apples, cheese and some seasoning into a bowl and toss together.
- Lightly dust a work surface with flour, then roll out one of the dough balls to form a 22cm round. Spoon one-sixth of the potato mix down the centre of the round, then pinch the edges together to make a sealed parcel. Repeat with the remaining dough balls and filling. Transfer the pasties to the lined baking tray and chill for 30 mins.
- Heat the oven to 220C/200Cfan/gas7. Melt the remaining butter in a small saucepan over a low heat, then generously brush over the pasties. Bake for 20 mins, then turn the heat down to 200C/180C fan/gas 6 and cook for 25-30 mins more, or until golden brown.

GREAT GRANDMA JOHNS' PASTIES
This recipe originated in Cornwall England, and was adapted by my Great Grandmother Johns. It was originally made for the coal miners and wrapped in butcher paper. The hard pastry shell would keep the juicy contents fresh until the miners were ready to eat. My Grandma would serve with relishes and Coca Cola. If you want to make these more quickly, you can use refrigerated pie crusts instead of the pastry recipe.

- In a medium bowl, stir together the flour and 1/4 teaspoon of salt. Cut in butter with a fork or pastry blender until the mixture resembles bread crumbs. Stir in cold water with a fork until the mixture is able to come together in a ball. Knead a couple of times then divide pastry into two pieces. Pastry may be refrigerated for later use at this time.
- Preheat the oven to 400 degrees F (200 degrees C). On a lightly floured surface, roll out each half of the pastry into a 10-inch circle.
- Place half of the potato slices in a line down the center of each circle, leaving at least 1 inch at each end uncovered. Arrange onion slices over the potatoes, and season with salt, pepper and some of the dried parsley. Place half of the beef cubes over each onion layer, then season again with salt, pepper and dried parsley. Fold the edges over the pastry over the filling, and tuck in the ends.
- Transfer the two pastries to a greased baking sheet, and cut a few slits in the top of each one for ventilation.
- Bake for 45 minutes in the preheated oven. Remove from the oven, and reduce heat to 350 degrees F (175 degrees C). Spoon 1 teaspoon of water into each slit on the tops of the pasties. Return to the oven, and bake for an additional 15 minutes, or until golden brown. Serve whole, or cut into halves.
