APPLE AND PEANUT BUTTER GREEN SMOOTHIE

- In a high-speed blender (and in this specific order), add the apple, lemon juice, peanut butter or almond butter, spinach, kale, ice cubes and water and blend on high until very smooth (about the time it takes you to refill your ice cube tray and stick it back in the freezer). Pour into glasses and sprinkle with super seed mix, if using.
- You can also add a few shakes of turmeric, a small chunk of ginger or 2 stalks of celery (chopped). If so, add after the nut butter and before the greens and blend until very smooth.
- To make these freezer-friendly: In quart-size deli containers or ziptop bags, pack in the apple, lemon, peanut butter or almond butter, turmeric/ginger/celery (if using), spinach and kale. Make a bunch at a time and seal and freeze for up to 3 months. When ready to blend, add the contents to a blender along with 1 cup of water--no need to add ice. Let it sit for a few minutes so that it can defrost slightly, then use a butter knife to carefully break it up into slightly smaller chunks. Blend on high, using the tamper to help everything incorporate, until very smooth. Pour into glasses and sprinkle with super seed mix, if using.

My own low calorie/high protein take on the Hearty Apple Smoothie with peanut butter from Smoothie King. Perfect for breakfast or a afternoon snack for kids :) I always keep frozen fruit on hand, so this comes together very quickly.

- 1. Thaw banana and apple in microwave for 10-15 seconds (this makes the blending process easier).
- 2. Put all ingredients into a blender and blend until smooth.

- To core the apple: Wash and dry the apple, and leave the peel on. Stand the apple on its base. Place your knife on top, near the stem. Cut straight down along the core. The first side of the apple will come off. Set it aside. Lay the apple flat, cut-side down. Cut off the right and left sides, keeping your knife as near the core as possible. Turn the apple, and cut off the one remaining side. You should have a long, rectangular piece that contains the core, and 4 nice big chunks (the ones you cut away). Discard the core. Cut the four pieces into 1-inch chunks. Place it in a blender.
- To the blender, add the remaining ingredients in the order listed: almond milk, oatmeal, banana, peanut butter, maple syrup, vanilla, cinnamon, and allspice. Blend until smooth. Add a small handful of ice, then blend again. For an even thicker smoothie, add a few ice cubes and blend again. For a thinner smoothie, add more milk. Sprinkle with additional cinnamon as desired and enjoy!
