SWEET AND PUNGENT APPLE AND CABBAGE SLAW
I have a weakness for any kind of coleslaw, which I'm happy to eat for lunch every day. This one is especially nice with a little feta sprinkled on top.

Steps:
- Whisk together the lemon juice, vinegar, salt, mustard, oil and yogurt.
- Shred the carrot, celery, radishes, cabbage and apples. I use a food processor for this, but you can also use a box grater, and for the cabbage you can use a chef's knife. Toss immediately with the dressing. Serve topped with crumbled feta if desired.

FARMHOUSE APPLE COLESLAW
A friend from church gave me this apple coleslaw recipe that her grandmother handed down to her. The flavors complement each other well, while the fruit creates a refreshing change of pace from the usual coleslaw. -Jan Myers, Atlantic, Iowa

APPLE AND KOHLRABI COLESLAW
Steps:
- Combine the cabbages in a large bowl. Sprinkle with 2 teaspoons of the kosher salt. With clean hands, massage the cabbage until soft and wilted, about 3 minutes. Transfer the cabbage to a colander set in the sink and rinse the bowl. Put a plate on top of the cabbage and weight it (a 28-ounce can of tomatoes works well for this). Let sit for 1 hour. Rinse the cabbage in cold water and let drain for 20 minutes. Wipe the bowl with a clean kitchen towel.
- Return the cabbage to the bowl and add the kohlrabi, apples, and minced parsley. Toss well to combine. Set aside.
- In a blender, combine the lime juice, vinegar, shoyu, sugar, and ¼ teaspoon salt. With the blender running, slowly pour in the safflower oil through the hole in the lid and blend until emulsified. Season with salt and white pepper to taste.
- Pour enough of the dressing over the salad to lightly coat, toss, and garnish with the parsley leaves, then serve.

Steps:
- For the dressing:.
- Place the vinegar, honey, mustard, poppy seeds, and salt in a large, nonreactive bowl, season with pepper, and whisk to combine. While whisking constantly, slowly add the oil until all of it is incorporated. Add the onion, stir to combine, and set aside.
- For the coleslaw:.
- Wash and dry the kale. Cut out and discard the tough stems. Arrange the leaves into stacks, slice crosswise into 1/4-inch ribbons, and add to the bowl with the dressing. Core the apples, cut them into 1-1/2-inch-long matchsticks, and add to the bowl. Toss to combine. Let the coleslaw sit for at least 15 minutes at room temperature and up to 1 day in the refrigerator for the flavors to meld. Toss again before serving.
