MY FAVORITE SESAME NOODLES
This recipe for sesame noodles is one I've created through trial and error. It combines green onions, peanut butter and sesame oil for a wonderfully complex flavour.

Steps:
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the spaghetti, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 12 minutes. Drain well in a colander set in the sink.
- Melt the peanut butter in a large microwave-safe glass or ceramic bowl, 15 to 20 seconds (depending on your microwave). Whisk the honey, tamari, and chili sauce into the peanut butter, then stir in the sesame oil and ginger. Mix in the garlic and green onions and toss with the spaghetti. Top with the sesame seeds.

TAKEOUT-STYLE SESAME NOODLES
Noodles dressed with sesame are popular in many parts of China, but this particular style, made with peanut butter and served cold, became a Chinese-American staple in the United States in the 1970s. The family of Shorty Tang - an ambitious restaurateur who emigrated from Sichuan to Taipei to New York - firmly believes that he invented the dish and still serve it at Hwa Yuan, the restaurant he opened in 1967 in Manhattan's Chinatown. They have never divulged the exact recipe; this is our own lush but refreshing version.

- Bring a large pot of water to a boil. Add noodles and cook until barely tender, about 5 minutes. They should retain a hint of chewiness. Drain, rinse with cold water, drain again and toss with a splash of sesame oil.
- In a medium bowl, whisk together the remaining 2 tablespoons sesame oil, the soy sauce, rice vinegar, sesame paste, peanut butter, sugar, ginger, garlic and chili-garlic paste.
- Pour the sauce over the noodles and toss. Transfer to a serving bowl, and garnish with cucumber and peanuts.

This homemade sauce makes a sweet and spicy foil for linguine. The best sesame noodles I have every had!

- Bring a pot of lightly salted water to boil. Add pasta, and cook until al dente, about 8 to 10 minutes. Drain, and transfer to a serving bowl.
- Meanwhile, place a saucepan over medium-high heat. Stir in garlic, sugar, oil, vinegar, soy sauce, sesame oil, and chili sauce. Bring to a boil, stirring constantly, until sugar dissolves. Pour sauce over linguine, and toss to coat. Garnish with green onions and sesame seeds.

EASY SESAME CASHEW NOODLES
You might want to double up on the sauce ingredients and increase the pasta amount slightly. This sauce is better if prepared a day or even two days in advance and refrigerated, to allow the flavors to blend, but allow to sit until room temperature before using. This makes a great side dish!

- In a blender, blend the sauce ingredients until smooth.
- Season with salt and pepper to taste.
- Just before mixing with the sauce and serving, cook the pasta in a large pot of boiling salted water until JUST firm-tender (do not overcook the pasta) drain and rinse well under cold water; drain well again.
- Toss the cooked pasta with the prepared sauce (if the sauce was chilled then warm before mixing with the pasta).
- Sprinkle with chopped cashews and serve.

EASY SESAME NOODLES
Steps:
- Place the spaghetti, sesame dressing and 1 teaspoon toasted sesame seeds in a medium bowl and toss well with tongs to coat the spaghetti in the dressing. Transfer to a serving dish.
- Fan the marinated tofu on the spaghetti and place the edamame and pickles on top of the noodles. Garnish with the remaining teaspoon sesame seeds and sprinkle with salt and pepper.
- Place the hot water, rice vinegar, salt and sugar in a small mixing bowl and mix to dissolve the sugar and salt. Place the cucumbers in a 16-ounce airtight container and pour the vinegar mixture over them. Seal the container and refrigerate for 1 hour or overnight.
SESAME NOODLES
My niece's version of this classic recipe, it tastes fantastic and is quick and easy! You can also top this with cooked tofu and serve with a vegetable side dish for a healthful vegan dinner:D Adjust heat according to taste, and if you prefer a sweeter taste, swirl in a tablespoon of honey with the tahini and peanut butter.

- Cook spaghetti according to package directions.
- saute garlic and hot pepper in oil for 1-2 minutes.
- Mix in tahini and peanut butter, then whisk in warm water until the sauce is a creamy consistency (depending on the peanut butter you use and personal preference).
- Taste and add pepper, salt or more red pepper or hot sauce as desired.
- Toss with pasta and garnish with scallions, cilantro, cucumber then serve with lime wedges.

- Install the standard blade in the work bowl of your food processor then put the work bowl on your scale and weigh in all the ingredients except the pasta , remembering to zero out the weight of each ingredient as you go. This is one of those cases where the scaling is more about convenience than precision, so if you ere a gram or two on either side of target, it’s okay. It’s not going to explode or anything.
- Pulse about ten times in 3-second bursts to bust up the garlic. Then run steady for about two minutes. Scrape down the sides if needed and go another minute or until the sauce is smooth.
- Place 2/3rds of the sauce in the bottom of a large bowl and toss in the noodles until thoroughly coated. This is a lot easier if the sauce is warm so if you’re getting it out of the fridge you may want to nuke it briefly.
- Garnish with any of the options listed above and consume. I typically go with the sesame seeds and green onions.
