Steps:
- Cook onions in 1 tbsp butter or shortening in Dutch oven until tender-crisp; set aside.
- Brown roast in remaining butter or shortening in Dutch oven over medium heat 15 to 20 minutes or until browned on both sides. Pierce entire surface of meat with fork.
- Combine apple juice, catsup, salt, pepper, thyme, mustard and basil; add to meat. Top meat with reserved cooked onions; cover and cook slowly 2 1/2 hours or until almost tender.
- Brush sweet potatoes with lemon juice for bright color; add to meat. Continue cooking, covered, 30 to 40 minutes or until meat and potatoes are tender. Place meat and potatoes on warm platter.
- Sprinkle potatoes with chopped parsley or garinish with apple rings and parsley, if desired. Serve gravy over sliced meat.

APPLE FLAVORED POT ROAST
This is a great recipe for a slightly sweet, tender pot roast made with apple cider and onion soup mix.

- Preheat the oven to 325 degrees F (165 degrees C).
- Place the roast in a roasting pan or large casserole dish. Fill the dish with about 1/2 inch of water, then stir in the apple juice concentrate. Sprinkle soy sauce over the top of the roast. Make several small slits in the roast and stuff pieces of garlic into them. Season the roast with onion soup mix. Cover with aluminum foil or a lid.
- Bake for 2 hours in the preheated oven, then remove from the oven and add the carrots and potatoes. Cover again, and continue to cook for an additional 2 hours, or until roast is fork tender.

- 1.Place apples and water into the Vitamix container in the order listed and secure lid. 2.Select Variable 1. 3.Turn machine on and slowly increase speed to Variable 10, then to High. 4.Blend for 45 seconds, using the tamper to push apples into the blades until pureed. 5.Transfer puree to a bowl lined with cheesecloth set atop a bowl and twist until juice is extracted. 6.Allow to strain about 10 minutes. For the best flavor, combine two or more apple varieties.

- GRAVY: Skim excess fat from cooking liquid; add water if needed to make 1 1/2 cups.
- Mix 1/2 cup water and 2 Tbsp Unbleached Flour; stir gradually into cooking liquid.
- Heat to boiling; cook, stirring 3 to 5 minutes.
- Season with salt and pepper, if desired.
- Gravy may be served in Large Apple that has been scooped out, if desired.

THE BEST HOMEMADE APPLESAUCE
After tasting the pure apple flavor of this homemade sauce, you just might never go back to the store-bought kind. Supermarket applesauce can be loaded with added sweeteners and flavorings. We use only a little sugar, plus lemon juice, salt and cinnamon, providing a balanced flavor and the perfect amount of sweetness.

- Combine the apples, sugar, 1 cup water and 1/2 teaspoon salt in a large pot. Bring to a simmer over medium-high heat, stirring occasionally. Reduce the heat to medium-low. Cover with a tight-fitting lid and cook until the apples are very soft, 18 to 20 minutes.
- Stir in the lemon juice and cinnamon. Let cool for 5 minutes or so, then transfer the apple mixture to a blender, filling no more than halfway. Remove the center cap from the lid and place it on the blender. Cover the lid with a folded kitchen towel to catch splatters and pulse until smooth. Alternatively, puree in the pan with an immersion blender.
- Transfer the applesauce to a bowl and refrigerate until cool, about 1 hour. Store leftover applesauce in an airtight container in the refrigerator for up to 5 days.

Cooking apples will turn into the texture of commercial applesauce while others will keep their shape even after the cooking. Either way it's delicious.
