- With vegetable peeler, peel squash. Remove seeds; cut squash into 1/2-inch cubes. In 1 1/2-quart microwavable casserole, place squash and cider. Cover; microwave on High 5 to 7 minutes, stirring once halfway through cooking, until squash is tender.
- Stir in remaining ingredients. Cover; microwave on High 2 to 3 minutes longer, stirring once halfway through cooking, until squash and apples are very tender. Serve immediately. If desired, mash before serving.

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, stir together brown sugar, butter, flour, salt, and mace. Arrange squash in an ungreased 9x13 inch baking dish. Top with slices of apple, then sprinkle with the sugar mixture. Cover with a lid or aluminum foil.
- Bake for 50 to 60 minutes in the preheated oven, or until squash is tender.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x11-inch casserole dish.
- Place squash on a flat work surface. Trim off the hard outer rind with a knife. Cut squash into 1/2-inch slices; arrange slices over the bottom of the prepared dish. Arrange apples on top.
- Combine brown sugar, butter, flour, salt, and mace together in a bowl. Pour mixture over the apples. Sprinkle cranberries on top.
- Bake in the preheated oven until top is golden brown and apples are tender, 50 minutes to 1 hour.

This is another variation of squash casserole, but the applesauce makes it lighter than most. Easy to make and very tasty! Prep time includes time to cook fresh squash.

Steps:
- Mix together applesauce, brown sugar, salt, heavy cream, squash, nutmeg, 4 Tbsp of the melted butter, and eggs.
- Place in buttered, 1 1/2 quart, shallow casserole.
- Mix together bread crumbs, remaining 2 Tbsp butter, and almonds.
- (This can be made a day ahead up to this point.) Bake uncovered at 375 degrees for 35 minutes.
- Or it can be frozen and baked later at 375 degrees for 55-65 minutes (if still frozen).
ACORN SQUASH ROASTED WITH APPLESAUCE
I finally found a squash recipe that DH likes and enjoyed. This is so simple, revised to suit our taste, from Chef Micheal Smith, my favourite TV chef.

Steps:
- Preheat oven to 350f degrees.
- Cut squash in half, crossways, scrape out the seeds. Spray baking dish with veggie spray. Place skin side down, cut side up in baking dish.
- Put 1 teaspoon of butter in each half of squash, sprinkle each half with salt and freshly ground pepper.
- Fill each squash half with 1/2 cup applesauce, top with remaining butter and sprinkle again with salt and pepper.
- Pour water around squash.
- Roast on middle rack of oven for approximately 1 hour or until golden brown and caramalized.

I got this recipe from a Weight Watchers meeting and it has become one of my most favorite recipes! You could probably make it into a dessert by adding a crisp/crumble topping to it or by serving it over ice cream but I love it all by itself!! (2 points per serving)

Originally from the Boston Globe's Confidential Chat in the 1960s. My children weren't crazy about yams in any form so I used this squash recipe instead. I ended up having to double the recipe because they absolutely loved it!

Steps:
- Heat squash over low heat, breaking it up and stirring occasionally, until just heated through.
- Remove from heat and beat in butter, sugar, salt and egg yolks.
- Gently stir in applesauce. Set aside to cool slightly.
- Beat egg whites with cream of tartar until stiff but not dry.
- Gently fold into squash mixture.
- Turn into buttered 1-quart souffle dish with a collar of buttered foil around the dish to allow room for safe rising.
- Bake in middle of 325 degree oven for 35 minutes. When done it will be high, light and still slightly soft in the center. Serve immediately.

- To easily peel the acorn squash without losing a lot of vegetable, gently drop the squash in a large pot of boiling water, and boil for 15 minutes. Pour off the boiling water and fill with cold water and let sit 5 minutes to cool. When cool enough to handle, use a knife to slice off the peel on the ridges and use a teaspoon to dig out the peel in the valleys. Slice the squash in half and remove the seeds and stem. Then slice the halves into sections and finally cut into 1 inch chunks.
- Place the squash chunks into a large microwave-safe bowl along with the apples. Dot with pieces of butter. Sprinkle the brown sugar, walnuts, salt and cinnamon over the top. Cover with plastic wrap, and poke a few holes in it for ventilation.
- Cook in the microwave for 7 1/2 minutes on full power. Remove, uncover, and stir. Return to the microwave, and cook for another 7 1/2 minutes on full power, until tender. Serve hot.
